Abstract

1468222 Artificial sweeteners GENERAL FOODS CORP 25 March 1974 [2 April 1973 (2)] 13213/74 Heading A2B A method of making a dipeptide sweetening composition of improved solubility in water comprises blending together a dipeptide and a solid edible acid. The composition may be made by (a) grinding the dipeptide, (b) grinding the solid edible acid, and (c) mixing the dipeptide and acid, step (c) being carried out either before or after grinding. In addition a volatile inert organic liquid e.g. chloroform, ether or ethanol, may be added to the ground mixture, and evaporated, resulting in a composition in which the dipeptide is coated with the acid. The preferred dipeptide is L-aspartyl- L-phenylalanine methyl ester, and the acid may be citric, malic or adipic. The ratio of acid to dipeptide is from 2:1 to 6:1 and the particle size may be 160 to 50 U.S. mesh. The composition may be used in beverage compositions, gelatin desserts, baking formulations, candies, salad dressings and dog foods. [GB1468222A]
