Abstract

Forno di cottura a gas a convezione forzata per la cottura degli alimenti mediante convezione forzata dell'aria calda, scaldata da un condotto tubolare (15) disposto nella camera di cottura (5) del forno, oppure mediante eventuale immissione di vapore acqueo generato in una caldaia (33) collegata con la camera di cottura (5), oppure con l'azione combinata dell'aria calda e del vapore acqueo surriscaldato. Forno in cui il condotto tubolare (15), contenente il turbolatore (21), è collegato ad una sua estremità ad una camera di plenum (18) contenente un bruciatore (19) e raccordata ad un ventilatore (26) atto a determinare una circolazione forzata dei gas combusti attraverso detto condotto tubolare ed il successivo scarico dei gas stessi.
