Abstract
Un procedimento e un impianto per la sterilizzazione ed il confezionamento di polpa di pomodoro in pezzi; la polpa di pomodoro viene preriscaldata ad una temperatura di inattivazione enzimatica miscelandola con quantità in eccesso di un fluido alimentare di trasporto comprendente salsa di pomodoro calda, dopodiché la miscela di polpa di pomodoro e di fluido di trasporto viene surriscaldata ad una temperatura di sterilizzazione prima di essere alimentata in un polmone di stoccaggio asettico da cui viene prelevata e pompata sempre in condizioni asettiche lungo un percorso di raffreddamento al termine del quale il liquido di trasporto viene in parte drenato mentre la polpa di pomodoro in pezzi viene alimentata ad una stazione di confezionamento.
