Abstract
La presente invenzione riguarda mutanti dell'isoamilasi in cui almeno uno dei residui amminoacidici Thr355, 11e367 e Asp507 è sostituito con un residuo amminoacidico differente; un vettore plasmidico contenente la sequenza nucleotidica che codifica per almeno uno di detti mutanti; un ceppo di Bacillus trasformato con detto vettore plasmidico; la preparazione di detti mutanti mediante fermentazione di un ceppo di Bacillus trasformato. I mutanti dell'isoamilasi sono stabili ad alte temperature (50°-53°C) a pH 5,0-6,5 e conservano la loro attività specifica inalterata. Questi mutanti sono utili nel settore alimentare nella produzione di prodotti da forno, in birrificazione e, soprattutto, nella preparazione di sciroppi di glucosio, maltosio ed altri polisaccaridi a partire dall'amido.
