Abstract

Un dispositivo di scarico (10) in una macchina di cottura, pastorizzazione e conservazione (11) di prodotti, quali creme di pasticceria, gelateria e gastronomia comprende un elemento a tappo (18) posto in un condotto di scarico (16) di una vasca (12), nel quale l'elemento a tappo (18) è disposto su un braccio (20) imperniato ad una parete esterna (17) della macchina (11) ed è spostabile all'interno del condotto (16), dotato in una zona intermedia di una apertura inferiore (41), tra almeno una posizione di tutto chiuso, una posizione di scarico verticale dalla apertura inferiore (41) ed una posizione di tutto aperto. Un dispositivo siffatto consente sia una rapida uscita del prodotto sia denso che liquido che una uscita regolata a piacere, e nel contempo permette un completo svuotamento della vasca evitando ristagni e favorendo l'igiene.
