Abstract

L'invenzione concerne un agitatore per cilindro di mantecazione, le cui palette di mantecazione presentano ciascuna, lungo il loro bordo libero, almeno una parte raschiante ed almeno una parte spatolante per la miscela trattata, dalla e sulla parete laterale refrigerata del cilindro di mantecazione. Per migliorare le condizioni di trattamento del gelato e ridurre l'usura delle palette, almeno alcune delle parti spatolanti presentano, in una sezione perpendicolare all'asse di rotazione, una configurazione arcuata con raggio e/o centro diversi da quelli della parete laterale del cilindro di mantecazione, così da definire con quest'ultima un passaggio a cuneo per la miscela, avente sezione decrescente dall'ingresso all'uscita. In tal modo, si ottiene un'alternanza di spalmature e successive raschiature della miscela sulla e dalla detta parete laterale, con una fase di schiacciamento meccanico progressivo della miscela entro il cuneo fra la paletta mantecatrice rotante e la parete del cilindro mantecatore.(fig. 3).
