“SCAMBIATORE DI CALORE MIGLIORATO PER UN DISPOSITIVO DI PROCESSAMENTO DI CIBO E FORNO PROVVISTO DELLO STESSO†`` IMPROVED HEAT EXCHANGER FOR A FOOD PROCESSING DEVICE AND OVEN FITTED WITH THE SAME ...
The present invention relates to an improved type of heat exchanger for a food processing / cooking device, such as an oven, as well as to a forced convection oven provided with such a heat exchanger.
From both EP-A-1106933 and US-A-5915372 a forced convection oven for cooking food using as a heating source a burner or other device suitable for generating a flow of hot gases, and a heat exchanger tubular type which conveys the hot gases through the working chamber of the oven, in use occupied by the food to be cooked, around a fan arranged in the working chamber and then towards an exhaust.
The fan forcibly circulates the air present in the work chamber within it and around sections or segments of the tubular heat exchanger piping arranged adjacent to the fan itself, in order to heat the air and cook accordingly food while keeping the temperature as uniform as possible in the work chamber.
Although satisfactory, the described heat exchangers and the relative furnaces require one or more U-bends which connect straight segments of piping together in such a way as to substantially form a ring with an approximately rectangular shape around the fan. In EP-A-1106933 a cantilevered U-curve connects a first section of piping coming directly from the burner and which runs around the fan with a second section of piping, which forms a return loop around the fan, which in turn arrives up to the U-curve. In this configuration, the combustion chamber can create a warmer point in the working chamber, which is detrimental to the sought-after uniformity of temperature. Furthermore, the cantilevered suspended U-curve is free to move as a result of thermal expansion phenomena: in use, this can cause the induction of undesirable stresses on the welds of the pipe sections, as well as possible vibrations with consequent generation of unwanted noises.
DE 20 2004 015 288U1 attempts to solve the problem connected with the hot spot constituted by the combustion chamber by mixing the hot burnt gases around the combustion chamber itself with part of the gases already circulating in the heat exchanger and partially cooled.
PCTEP2010051952 by the same Applicant eliminates the problem constituted by the presence of a hottest point in the work chamber in correspondence with the combustion chamber of the burner, shielding it by means of a tubular jacket mounted around and away from a continuous side wall of the combustion chamber , in order to create a cavity around the latter which is also used as a hydraulic connection between a first section of piping, shaped like a ring, which runs around the fan, and a second section of piping, which comes out laterally from the jacket and turns around part of the fan.
However, it was found that, despite a certain reduction in the temperature in the first section of the pipe caused by the heat removed by the burnt gases, but already partially cooled, which circulate in the cavity, the initial part, closest to the burner, of the first section of pipeline, it can still get excessively hot, forming a hotter spot in the work chamber.
It is an aim of the present invention to overcome the drawbacks of the prior art, providing a heat exchanger for a forced convection oven and relative oven equipped with it, having reduced dimensions, high reliability, high constructive simplicity and at the same time guaranteeing a high temperature uniformity in the work chamber, high strength of the structure defined by the heat exchanger pipes, reduced stresses on the welds of the heat exchanger piping sections and substantial absence of vibrations and noises.
The present invention therefore relates to an improved type of heat exchanger for a food processing / cooking device, such as an oven, as defined in claim 1, as well as to a forced convection oven provided with such a heat exchanger, as defined in claim 9.
In particular, the heat exchanger and the relative oven according to the invention comprise a fan arranged in use in a working chamber for housing, in use, the food to be processed, and at least a first and a second pipe segment, made of metal, which rotate at least in part around the fan and which are associated, respectively, with a combustion chamber in use associated with a burner, and with a cavity delimited by a jacket that covers and shields the combustion chamber and which hydraulically connects the first and second segments to each other; the first pipe segment forms a substantially quadrangular ring around the fan which is inserted laterally into the cavity and includes, starting from the combustion chamber, a first curve which then leads to a succession of straight sections and curves belonging to the first pipe segment . The second pipe segment, on the other hand, has at least two branches parallel to each other, which curve around the fan and are connected to each other by a U-shaped curve arranged adjacent to the first curve of the first pipe segment.
According to the main feature of the invention, the first curve of the first pipe segment is mechanically constrained integral with the U-shaped curve of the second pipe segment by means of a bracket composed of perforated metal plates defining respective radiant elements suitable in use to receive and transmit heat for conduction from / between the pipe segments and to disperse this heat in the working chamber by radiation and convection.
The bracket has a T shape and is made up of at least two flat plates bound together and arranged at an angle, for example, but not necessarily, bound perpendicularly to each other. These two plates are welded a first inside the U-bend, generally formed by a smaller section tube constituting the second pipe segment, and a second to the first bend and to a central pipe of the first pipe segment, which it starts directly from the combustion chamber to connect with the first curve, forming a system of continuity between them.
On the one hand, the U-bend is no longer cantilevered in the work chamber, but is supported by the first pipe segment, which in turn is supported by a side wall of the work chamber. And, on the other hand, the heat generated in the external part of the fan impeller on the larger section tube (high due to the position in the shadow of the impeller air flow) is thus dissipated by conduction on the two plates.
This heat is in turn dissipated partly by convection with the air and partly by conduction with the smaller section tube. Part of this contribution by convection can also release heat to the internal fumes that run through the second pipe segment, much further downstream of the first than the combustion chamber, with regard to the direction of movement of the hot gases or fumes in the pipe segments, contributing to raise the overall thermal efficiency of the furnace.
The advantage of this solution is therefore a dissipation of heat in correspondence with the first curve which constitutes a critical point for overheating, while the dissipation on the second pipe segment allows a greater distribution of temperatures along the two pipe segments and, therefore, a better cooking uniformity.
Furthermore, the second pipe segment is no longer totally independent from the first, as in similar known constructions for lay-out, thus avoiding the drawbacks of the known art such as overloads on the welds due to the relative displacements caused by thermal expansions and risks of vibrations / noise.
Ulteriori caratteristiche e vantaggi della presente invenzione appariranno chiari dalla descrizione che viene di seguito fornita di una sua preferita forma di realizzazione, a puro titolo di esempio non limitativo e con riferimento ai disegni allegati, nei quali: Further characteristics and advantages of the present invention will appear clear from the description which is provided below of a preferred embodiment thereof, purely by way of non-limiting example and with reference to the attached drawings, in which:
- la Figura 1 illustra schematicamente, in vista assonometrica di tre quarti anteriore, un forno a convezione forzata provvisto di uno scambiatore di calore realizzato secondo il trovato; e Figure 1 schematically illustrates, in a front three-quarter axonometric view, a forced convection oven provided with a heat exchanger made according to the invention; And
- Figures 2 and 3 illustrate details of the heat exchanger of Figure 1 on an enlarged scale and in axonometry.
With reference to Figures 1 to 3, 1 indicates as a whole a heat exchanger that equips a forced convection oven 2, of which only a working chamber 3 is schematically shown in broken lines, in use occupied towards its rear bottom, or rather from a band affixed to a known and not illustrated access door, from the heat exchanger 1 and, for the rest of the available space, from food to be processed, typically to be cooked, not illustrated for simplicity.
The heat exchanger 1 comprises a fan 4 arranged in use in the working chamber 3 and at least a first and a second pipe segment, made of metal and indicated respectively with the reference numbers 5 and 6, which rotate at least in part around the fan 4 and which are associated, respectively, the first with a combustion chamber 7, in use associated in turn with a burner 8, and the second with an interspace 9 delimited by a jacket 10, which covers and shields the combustion 7 towards the working chamber 3 and which hydraulically connects the first pipe segment 5 and the second pipe segment 6 to each other.
In particular, the combustion chamber 7 is constituted by a tube delimited by a continuous cylindrical side wall 11 without perforations, has an axis of symmetry A, is supported axially by a cantilever within the working chamber 3 by a side wall 12 of the same and is mounted coaxially to the burner 8, which can be placed outside the work chamber 3, or directly all inside the combustion chamber 7, in any case so as not to have exposed surfaces in the work chamber 3.
The jacket 10 is defined, in the non-limiting example illustrated, by a cylindrical tube, or it can be defined by a bush with a section having a profile composed of a semicircular part and a frusto-conical part, in any case of transversal width greater than that of the pipe defining the combustion chamber 7, so as to delimit the interspace 9 between them; the first pipe segment 5 forms a substantially quadrangular ring around the fan 4 which starts axially in cantilever axis from the jacket 10 starting from the combustion chamber 7, with a central pipe 13, having a diameter greater than or equal to the one defining the combustion chamber 7 is lower than that defining the jacket 10, to which a fluid-tight head is connected, for example by welding.
In this way, the first pipe segment 5 receives inside the fumes or hot gases produced by the burner 8 and is inserted laterally into the cavity 9 through the jacket 10, so that the fumes that have passed through it, partially cooled to heat the chamber 3 , touch the wall 11, heating up and thus removing the excess heat, and are then conveyed through the interspace 9 into the second pipe segment 6. The latter has at least two branches 14 and 15 parallel to each other that curve around the fan and which are connected together, hydraulically and mechanically in series, by a U-bend 16.
A first branch 14 of the pipe segment 6 protrudes laterally from the interspace 9 through the jacket 10 and receives the burnt gases, which are heated by traveling along it and touching the wall 11, while a second branch 15 of the pipe segment 6, in this case shown directly connected to branch 14 by the U-shaped curve 16, in the illustrated example it makes an L around the fan 4 and then connects in a known way with a drain, not shown, to which, depending on the relative arrangement of the fan 4 and the segment 15, the latter could also connect directly, without formal the illustrated L.
The pipe segment 5 includes, starting from the combustion chamber 7 and in addition to the already mentioned central pipe 13, a first curve 17 which then leads to a succession of straight sections 18 (indicated in succession, starting from the curve 17, with 18b, 18c, 18d) and of bends, all belonging to the first pipe segment 5 and which complete the loop path of the same.
According to one of the main characteristics of the invention, the U-shaped bend 16 which connects the branches 14 and 15 of the second pipe segment 6 to each other is arranged adjacent to the bend 17 of the first pipe segment 5 and is oriented at a certain angle, in the non-limiting example shown at right angles, with respect to a symmetry B axis of curve 17; the curves 16 and 17 are also mechanically bound together by means of a bracket 18 (Figures 2 and 3) composed of perforated metal plates 19,20 defining respective radiating elements suitable in use to receive heat by conduction from the pipe segments 5 and 6, in particular from segment 5, warmer than segment 6, as it is the path in use by the hot gases / fumes that have just left the combustion chamber 7, and to disperse this heat in the work chamber 3 by radiation and convection, as well as to transport part of this heat, by conduction, from the pipe segment 5 to the colder pipe segment 6, in order to partially heat the colder gases / fumes that flow through the pipe segment 6 itself, in addition to the heat already removed from them in the interspace 9.
In the case illustrated, the first branch 14 of the second pipe segment 6 forms around the fan 4 a portal structure (i.e. in the shape of an inverted U) formed by a first portion 21 and a third portion 22 of this branch 14, which define the assembled ones, and by a second section 23 of the branch 14, which joins the sections 21 and 22 defining the crosspiece.
The first section 21 is directly supported by the U-curve 16 and, indirectly, through the bracket 18, by the curve 17 of the first pipe segment 5, while the third section 22 is directly supported, from the mechanical-structural point of view, from the jacket 10, which is in use supported cantilevered by the side wall 12 together with the burner 8 and the combustion chamber 7.
According to one aspect of the invention, the bracket 18 is substantially T-shaped and is mounted astride both the first bend 17 of the first pipe segment 5 and the U-shaped bend 16 of the second pipe segment 6, so that the U-bend 16 is mechanically supported by the first bend 17 of the pipe segment 5 and, consequently, by the entire complex of the latter.
With particular reference to Figures 2 and 3, the T-shaped bracket 18 is composed of a first flat plate 19 fixed integral, by welding, to the U-bend 16 of the pipe segment 6 astride a side of the soffit (i.e. inside the curve) of the same; and by a second flat plate 20 fixed integral, by welding, to the first curve 17 of the first pipe segment 5, astride an extrados side (i.e. external to the curve) of the same, and which is integrally connected, by welding, with plate 19, in an angled position with respect to the latter, in the non-limiting example illustrated perpendicularly (but not necessarily) to plate 19.
These two plates 19 and 20 are welded the first (19) inside the U-bend 16 of the pipe segment 6, which is formed by a pipe with a smaller (or possibly equal) section than that of the pipe. forming the first segment of pipe 5, and a second (la 20) to the first bend 17 and, indirectly, to the central pipe 13 (up to which the plate 20 can eventually reach - the hatched part in figure 2) of the first pipe segment 5, which starts directly from the combustion chamber 7 to connect with the first bend 17 through a conical fitting 24; the bracket 18 consequently forms a system of continuity between the pipe segments 5 and 6 and, in particular between the bend 16 and the bend 17 with the relative pipe 13 directly integral with it (through the fitting 24).
In particular, the first flat plate 19 is arranged transversely to respective axes of symmetry C and D, parallel to each other, of respectively a first straight section 25 of the branch 15 and of the first straight section 21 of the branch 14 of the second pipe segment 6 , directly connected hydraulically (as well as mechanically) to each other by the U-bend 16; moreover, the plate 19 extends parallel to these axes of symmetry C and D, for a length such as to mechanically connect the sections 25 and 21 transversely to each other, but along only a part of the same immediately adjacent to the U-curve 16; on the side opposite the sections 25,21, the plate 19 is delimited by a curved edge 26 (figure 3) which copies the intrados profile of the U-shaped curve 16.
The flat plate 20 is vice versa arranged transversely to the axis of symmetry B of the curve 17 of the first pipe segment 5, for example perpendicularly (but not necessarily) to the plate 19, and substantially has the shape of an isosceles trapezoid in plan the curved oblique side, defining an edge 27 of the same which copies the extrados profile of the curve 17 and eventually extends up to the central tube 13.
According to a further aspect of the invention, the plates 19 and 20 forming the bracket 18 have through perforations 28 and 29 shaped as slots and oriented, for the plate 19, parallel to the axes of symmetry C, D and, for the plate 20, parallel to the common axis of symmetry A of the combustion chamber 7 and of the jacket 10 that covers it.
Furthermore, the plates 19, 20 have a substantially identical length extension in the direction of the symmetry axes B, C.
In this way, on the one hand, the radiant effect is maximized and both the circulation of air with turbulent effect, moved by the fan 4, within the chamber 3, and the conduction of heat through the plate 20 from the tube 13 and from the adjacent curve 17, exposed directly to the flow of hot gases produced by the burner 8, towards the plate 19 and, consequently, the curve 16 and the sections 21 and 25 of the pipe segment 6 more â € œcooledâ €.
On the basis of what has been described, an oven 2 for cooking food by forced convection made according to the invention comprises the work chamber 3 for housing the food to be cooked, the fan 4 arranged in the work chamber 3, a burner 8 associated with the combustion chamber 7 (i.e. an equivalent heating system capable of producing a flow of hot gases) arranged in the work chamber 3 and at least the first and second pipe segments, 5 and 6, to convey fluid-tight through the working chamber 3 the hot gases from the chamber 7 and around the fan 4 and then towards the exhaust, known and not illustrated.
Its main characteristic consists on the one hand in the fact that the combustion chamber 7, even if housed in the working chamber 3, is separated from it and thermally shielded by the interspace 9 that surrounds it; and, on the other hand, in the fact that the U-bend 16 intended to connect the two branches 14,15 of the pipe segment 6 traveled by the less hot gases is not cantilevered, but is mechanically supported by the upstream pipe 5 and, at the same time, it helps to cool the hottest part of this constituted by the curve 17 and the adjacent central pipe 13. In this way an oven 2 is obtained with an exceptional internal temperature uniformity in the chamber 3 and high thermodynamic efficiency.
