Abstract
【解決手段】本発明は、脂質量が12重量%以下、および、水分量が7重量%以下であることを特徴とする食肉乾燥粉末に関し、また、前記食肉乾燥粉末、および、防腐効力を有する天然成分を含有する経口組成物に関する。さらに、本発明は、部分肉から脂肪を除去する脂肪除去工程、脂肪を除去した部分肉を乾燥させる乾燥工程、および、乾燥した部分肉を粉砕する粉砕工程を有することを特徴とする前記食肉乾燥粉末の製造方法に関する。

Description
本発明の食肉乾燥粉末は、脂質量が12重量%以下、および、水分量が7重量%以下であることを特徴とする。
本発明の経口組成物は、前記食肉乾燥粉末を含有することを特徴とする。従来、製剤化に適した食肉原料は知られておらず、本発明では前記食肉乾燥粉末を使用することにより、万人に摂取しやすい経口組成物を得ることが可能になっている。
ユッカ抽出物:丸善製薬株式会社製「サラキープEP」
牛肉の部分肉(部位:腿肉)の脂肪を刃物でトリミングした。実施例1では除去した脂肪の量を多くし、実施例2ではより少なく、実施例3ではさらに少なくして、部分肉に残存する脂質量を変動させた。トリミングした部分肉を水から煮沸し、90〜94℃に達してからさらに2分間煮込んだ。煮込んだ部分肉を凍結し、真空条件(0.8Torr以下)、最終品温45℃となる条件で凍結乾燥し、乾燥した肉塊を粉砕機(ボールミル「遊星ボールミル」ヴァーダー・サイエンティフィック株式会社製)で粉砕して実施例1〜3の食肉乾燥粉末を作製した。
トリミングで除去する脂肪の量を少なくすること以外は実施例1と同様にして、比較例1の食肉乾燥粉末を作製した。
凍結乾燥の凍結時間を短縮したこと以外は実施例1と同様にして、比較例2の食肉乾燥粉末を作製した。
(脂質量)
ソックスレー抽出法(機器:ソックスレー抽出器、ウォーターバス(アドバンテック東洋株式会社製「TBM212AA」)、抽出溶媒:エーテル、抽出条件:75℃、8時間、試料供与量:約15g)により定量した。
(水分量)
株式会社ケツト科学研究所製水分計(赤外線水分計(FD800)、測定条件:常圧、75℃3分固定、機械自動調整、試料供与量:5g)で定量した。
脂質量、水分量の結果を表1に示す。
(性状)
いずれの例も平均粒子径は70μm(レーザー回折式粒度分布測定装置(株式会社島津製作所製「SALD−2200」))であった。実施例1〜3には繊維状物が確認されず、比較例1及び2には繊維状物が確認された(顕微鏡による観察)。
食肉乾燥粉末としては、実施例4〜6および比較例3〜4では、それぞれ実施例1〜3および比較例1〜2で作製したものを使用し、表2に記載した成分と配合量で混合し、丸剤を作製した(それぞれの例において、原材料として14kg用いた)。なお、表中に示した各成分の重量は、丸剤4粒あたりの重量である。
丸剤の外観を下記基準により評価した。その結果を表2に示す。
○:外観不良(油が出ている、及び/または、湿っている)の丸剤が発生する。
×:外観不良(油が出ている、及び/または、湿っている)の丸剤が発生しない。
実施例1で作製した食肉乾燥粉末、ユッカ抽出物を表3に記載の配合量で練り合わせて経口組成物を作製した。
ユッカ抽出物を配合しなかったこと以外は実施例7と同様にして、参考例1の経口組成物を作製した。
経口組成物をビニール袋に密封し、25℃、湿度60%条件下に7日間保存し、カビの発生の有無を下記基準により評価した。その結果を表3に示す。

×:カビの発生あり
表4に、本発明の食肉乾燥粉末(実施例1)を使用した丸剤の処方例を示す。これらの処方例においても、良好な外観を示した。
Claims (5)
- 脂質量が12重量%以下、および、水分量が7重量%以下であることを特徴とする食肉乾燥粉末。
- 請求項1に記載の食肉乾燥粉末、および、防腐効力を有する天然成分を含有する経口組成物。
- 防腐効力を有する天然成分の含有量が、食肉乾燥粉末1重量部に対し0.0015〜0.2重量部である請求項2に記載の経口組成物。
- 固形剤である請求項2または3に記載の経口組成物。
- 部分肉から脂肪を除去する脂肪除去工程、
脂肪を除去した部分肉を乾燥させる乾燥工程、および、
乾燥した部分肉を粉砕する粉砕工程
を有することを特徴とする請求項1に記載の食肉乾燥粉末の製造方法。
