Claims (9)
- ガラクトオリゴ糖調製物を調製するためのプロセスであって、ラクツロース含有飼料を、パピリオトレマ・テレストリス(Papiliotrema terrestris)株MM13-F2171(アクセッション番号:NITE BP-02177)に由来するβ-ガラクトシダーゼ(EC3.2.1.23)と接触させる工程を含む、プロセス。
- 前記ラクツロース含有飼料が、40~58重量%のラクツロースを含む、請求項1に記載のプロセス。
- 前記ラクツロース含有飼料が、50~55重量%のラクツロースを含む、請求項2に記載のプロセス。
- 前記ラクツロース含有飼料のpHが、3.5~6.5の範囲である、請求項1~3のいずれか一項に記載のプロセス。
- 前記ラクツロース含有飼料のpHが、5~5.5の範囲である、請求項4に記載のプロセス。
- 前記β-ガラクトシダーゼが、1~20LU/グラムのラクツロースの濃度で使用される、請求項1~5のいずれか一項に記載のプロセス。
- 前記β-ガラクトシダーゼが、3~6LU/グラムのラクツロースの濃度で使用される、請求項6に記載のプロセス。
- 50~75℃の範囲の温度で、前記ラクツロースを前記β-ガラクトシダーゼと反応させる、請求項1~7のいずれか一項に記載のプロセス。
- 65~70℃の範囲の温度で、前記ラクツロースを前記β-ガラクトシダーゼと反応させる、請求項8に記載のプロセス。
