Abstract

PURPOSE:To obtain a non-hygroscopic syrup by spray drying a syrup- incorporated aqueous solution of alkali-solubilized casein. CONSTITUTION:An aqueous solution containing 5 - 40wt.% of an alkali- solubilized casein is incorporated with 20 - 60wt.%, on a solid basis, of syrup (e.g. fructoligosaccharide) and, if needed, 1.0 - 70wt.%, based on the syrup solid content, of oil (e.g. tallow) and/or an emulsifying agent (e.g. sorbitan fatty acid ester) followed by agitation at <=80 deg.C to effect homogenization followed by spray drying at 80 - 180 deg.C.

られたり、非消化性の甘味源としてダイエツト食品に用
いられたり、ビフィズス菌成長促進因子として一部の食
品、飼料用に用いられたりしている。

、デキストロース、酸化ケイ素等に吸着させて粉末化さ
せたものがあるが、これらは吸着されている液糖自体の
吸湿性のため、団塊化してしまう問題点を有し、団塊化
後はむしろその取扱いは困難にすらなる欠点を有してお
り、このため未だに流通商品をこなっていない。
