Description
(産業上の利用分野)
この発明は、原料ミツクスに所定質量の空気を
供給し、安定したばらつきのないオーバーランを
有する空気供給量の制御方法および装置に関する
ものであつて、ホイツプクリーム、アイスクリー
ム又はシヤーベツト等を製造する分野で利用され
る。
(従来の技術)
従来、オーバーランはホイツプクリームやアス
クリームのボデイ、組織、味に及ぼす影響が大き
く、設定したオーバーラン値より低すぎるとボデ
イは重く湿潤となり、組織は粗く、味は低下す
る。又高すぎると組織は泡沫に富み雪状となる。
更に生産コストとの関係も重要である。
従つてオーバーランは常に適正な状態を維持す
ることが望ましい。
オーバーランに影響する要因としては、ミツク
スの組成、ミツクスの前処理の方法、空気量、フ
リーザー又はホイツパー内の温度、ミツクスの流
量、吐出圧力等が挙げられる。これらの要因のう
ち空気量の制御は、特に困難である。
一般に空気流量の定量的制御を手動で行う場
合、圧力計を見ながら空気弁の開度を微量調整す
るが、その結果がある遅れをもつて表われるの
で、オーバーランを一定に維持するには、多年の
経験と熟練を要し、運転者の勘と経験に負うとこ
ろが大きく、製品の優劣を生じやすい。
しかも熟練者にしてなおオーバーラン設定値に
対して5%の程度のバラツキは避けられない状況
にある。更に運転開始時はオーバーランが不安定
で、所望のオーバーランに達するのに最低5分以
上を要し、大量の生産ロスが生じ、ロスタイムと
なつている。
自動制御の方法も提案されており、特公昭35−
1796号においては、フリーザーの吐出口に一定間
隔に設けた2個の電極と電子管自動平衡器とを結
線し、オーバーランを電導率の変化として検出測
定し、予め電子管自動平衡器に指示した設定値に
同調せしめるようにダイヤグラム型空気吸入弁の
開度調整をする、アイスクリームのオーバーラン
自動制御装置が開示されている。
次に、特公昭45−20238号においては、原料ミ
ツクス並びに混入空気の体積流量を電圧として取
り出し、夫々の値をKE及びKeとし、次式により
空気混入量を算出している。

即ち、式を自動平衡型記録計に演算せしめ直
接、かつ連続的にアイスクリームの空気混入量を
指示せしめ方法が開示されている。
更に、特公昭56−46769号は、アイスクリーム
製造におけるオーバーラン自動制御装置に関する
発明であるが、明細書中にフリーザーの出口のア
イスクリーム温度を検出して、これによりフリー
ザーの冷媒の蒸発量を制御しながら、アイスクリ
ーム温度を一定とし、かかる状態下でミツクス流
量とエアー流量を測定し、ミツクスの基準流量に
対してある比率を掛けた信号でエアー流量を比例
制御すると共に、フリーザー出口密度計で測定さ
れたオーバーラン測定値で前記比率を電気的に補
正することによりなるオーバーラン自動制御方法
が開示されている。
(発明が解決すべき問題点)
前述した先行技術に共通する点は、空気量を体
積として把握していることである。
周知のように、理想気体の体積は絶対圧力に反
比例し、絶対温度に正比例する。実際の空気に対
してはこの法則は適用できないが、空気量を体積
として把握した場合、その圧力及び温度による補
正が必要である。然るに上記の先行技術はこの点
の補正が示されていない。従つて正確な空気量の
供給が望めないので、オーバーランを安定化する
のは困難である。
また、前記特公昭56−46769号の発明は、ミツ
クス流量に比例したエアー流量を供給する方法を
特徴としており、オーバーランの立上り時間の改
善ができない問題点があつた。
(問題点を解決するための手段)
この発明は、コンピユーターによるオーバーラ
ン自動制御システム採用し、必要空気量をコンピ
ユーターに指示させ、質量で供給することを特徴
としている。
即ちこの発明の方法は、オーバーラン前におけ
る原料ミツクスの比重、オーバーラン後における
ミツクスの目標比重及びホイツパー運転開始後の
立上り時間などの所定データを事前にコンピユー
ターへ入力し、立上り時においては定質量の空気
を供給し、立上り時間経過後においては、オーバ
ーラン発生装置に供給される原料ミツクスの流量
及びオーバーラン発生装置出口における品温を検
出してこれをコンピユーターへ入力し、これらの
データと前記オーバーランの前後におけるコンピ
ユーター入力済のミツクスの比重と立上り時間に
基づき算出された質量の空気を供給することを特
徴としたオーバーランにおける空気供給量の制御
方法である。
またこの発明の装置は、原料の供給タンクとミ
ツクスポンプ、オーバーラン発生装置及び電磁弁
付の空気供給管を具備したオーバーラン発生装置
における供給空気の質量を制御する装置であつ
て、供給空気の質量を検出する手段と、原料ミツ
クスの供給量を検出する手段と、オーバーラン発
生装置の出口における品温を検出する手段と、前
記手段により検出された原料ミツクス供給量、品
温及び予め入力されたデータによつて最適空気供
給量を算出する手段及び最適空気供給量と、前記
供給空気の質量とを比較して前記電磁弁の開度を
指令する比較制御回路とを有することを特徴とし
たオーバーランにおける空気供給量の制御装置で
ある。
実施例 1
次にこの発明の装置を第1図及び第2図に基い
て説明する。
第1図において、ミツクスタンク1に順次連結
された第1ミツクスポンプ2及び第2ミツクスポ
ンプ4は、いずれも定容積型のポンプであり、無
断変速機付の駆動モーター6によりVベルト又は
チエーン7を介して駆動されるが、第2ミツクス
ポンプ4の能力は、第1ミツクスポンプ2の能力
の約2倍に設定してある。前記両ポンプ間の接続
パイプ3は、接続継手14により空気供給管8と
接続されている。前記第2ミツクスポンプ4に
は、公知のオーバーラン発生装置(クリームホイ
ツパー又はアイスクリームフリーザー)5が連結
してある。上記回路をミツクス回路という。
一方空気回路の方は、空気圧縮機9と前記接続
パイプ3との間が接続継手14を介して空気供給
管8により接続され、該供給管8に、ミストセパ
レーター、除菌フイルター、減圧弁(以上図示せ
ず)、空気弁10、電磁弁11、三方切替弁12
及び逆止弁13が夫々通常の様に接続されてい
る。上記回路を空気回路という。
一方オーバーランの自動制御回路の構成は次の
通りである。
マイクロコンピユーター23及び比較制御回路
22に対するオーバーラン制御データの入出力面
から構成を説明すると、まず前記ミツクス回路に
おいては、マイクロコンピユーター23に入力す
る原料ミツクス供給量の検出手段として、第1ミ
ツクスポンプ2の回転数を検出するためのパルス
発信器15が取り付けられ、製品温度の検出手段
として測温抵抗体16がオーバーラン発生装置5
の出口付近に取り付けられている。これら二つの
センサは、計測値を電気信号として取り出し、コ
ンバーター26に送り込む。コンバーター26
は、入出力ポート25を介して前記マイクロコン
ピユーター23と接続されている。そして、該マ
イクロコンピユーター23の出力はコンバーター
26を介して前記比較制御回路22に入力される
ようにしてある。
次に空気回路においては、供給空気量の質量を
検出する手段として、空気供給管8と並列にバイ
パスに接続されたフローチユーブ17の外面2ケ
所に巻きつけられた感温抵抗線18,18と、こ
れに接続したブリツジ回路19及び、該ブリツジ
回路の出力電圧を増幅する幅増器20により構成
される質量流量計測装置21がある。図中24
は、設定オーバーランに必要な質量空気量をマイ
クロコンピユーターに算出させるためのデータ入
力装置である。
前記比較制御回路22は、マイクロコンピユー
ター23から出力された最適空気供給量のデータ
と増幅器20から出力された現実の空気供給量の
データとを比較し、電磁弁11へその開度を指令
する信号を出力するものである。該電磁弁11の
具体例は第2図に示すところであつて、前記開度
指令信号に応答して作動するソレノイドコイル1
1aと、該ソレノイドコイルによつて作動するプ
ランジヤー11bとこれに連設された弁体11c
と弁座11dとで構成されている。図中27は電
源装置であり、矢示28はミツクスの流れ方向、
矢示29はミツクスと空気の粗混合したものの流
れ方向、矢示30は設定オーバーラン済のホイツ
プクリーム又はアイスクリーム(製品)の流れ方
向、矢示31は空気の流れ方向である。
実施例 2
次にこの発明の実施例を説明する。
まずマイクロコンピユーター(「以下マイコン」
という)23を起動してフアイルをオープンし、
所定のデータをマイコンのランダムメモリーに読
込ませる。前記所定のデータはオーバーラン設定
比重、原料ミツクスの比重、ミツクスポンプの体
積係数、運転開始時の供給空気量(質量)、空気
比重、空気供給管の最大空気流量(質量)、定数
であり、これらのデータは実状に即して変更可能
なパラメーターである。
今、原料ミツクスの実測比重1.04、設定ミツク
ス流量200/h、オーバラン設定比重0.54の条件
設定を行い、上記のデータアアイルを修正の要あ
る場合は、修正データをデータ入力装置より入力
して修正した後、マイコンは予め記憶された運転
開始の空気量を比較制御回路へ出力する。
上記設定空気量を0〜5Vレンジにきざみ、上
径8ビツト、下限8ビツトの電気信号値で出力ポ
ート25にデジタル出力する。
次にコンバータ26により上記デジタル量をア
ナログ量に変換し、これは比較制御回路22に電
圧による流量設定信号として与えられる。
次に本オーバーラン自動制御装置の運転キーを
押すことにより、マイコンに積算時間が記憶さ
れ、電磁弁11、第1ミツクスポンプ2、第2ミ
ツクスポンプ4及びオーバラン発生装置(以下ホ
イツパーという)5のダツシヤー(図示していな
い)、電磁弁11が起動し、原料ミツクスは、ミ
ツクスタンク1から第1ミツクスポンプ2によつ
て200/hの流量で吸入され、次いで第2ミツク
スポンプ4に同流量で送られるが、前記したよう
に両ポンプの能力が異なるので、両者を連結する
パイプ3の中はある程度減圧される。
一方空気圧縮機9により発生した圧縮空気は、
ミストセパレーター及び除菌フイルター(以上図
示していない)にて清浄化され、減圧弁(図示し
ていない)にて最適の圧力1〜2Kg/cm2(粘度に
応じて選択)に減圧され、空気弁10を経て質量
流量計測装置21を通過する間に質量流量として
計測される。該装置の検出部の感温抵抗線18は
センサとしてフローチユーブ17に流れる空気量
の変化を温度の変化、つまり抵抗値の変化として
捉え、空気の温度や圧力を補正しなくても質量流
量の検出が可能である。この原理を利用して質量
流量の変化をブリツジ回路19によつて電圧信号
の変化として取り出している。この電圧信号(以
下センサ出力信号という)を比較制御回路22に
与え、前記した流量設定信号と比較して、センサ
出力信号が小さい時は、電磁弁11の開度がより
大きくなるようにソレノイドに印加される電流を
変化させて、弁を上に引き上げる。逆にセンサ出
力信号の方が大きい時は、弁の開度がより小さく
なるように、弁は下向に動作する。この弁の自動
的な動きは、ソレノイド電流の変化による電磁力
の微妙な自動調節によつて行われる。このように
してセンサ出力信号と流量設定信号が同じになる
ように弁の開度が自動調節されて、設定の空気量
が三方切替弁12、逆止弁13及び接続継手14
を経て、パイプ3中を移動中の原料ミツクス中に
混入される。
前記した積算時間がある設定した時間(本実施
例の場合3秒)を経過したら、運転開始時の定格
の空気量の算出方法が次式による運転中の算出方
法に変更される。
この理由は、運転開始の立上り時にはミツクス
ポンプの回転数が安定するまで約3秒要する為
と、必要空気量になるまで時間を要する為であ
る。運転中の空気量の算出は次式によつて行われ
る。

即ち運転中、第1ミツクスポンプ2及び第2ミ
ツクスポンプ4の回転数はごく微小時間の間で微
秒に変動し、それに伴い定容積ポンプではあるが
流量に同じように微妙に変動が生じる。空気量制
御はこれらの微妙な変動に追従出来ない。従つて
上記したFCPBの値は一定時間内のクリーム流量
の平均値を使用することにしたのである。
上記した式に基づいてマイコンに入力された各
データにより空気量が算出され、流量設定信号と
して入出力ポート25を経て、コンバーター26
によりアナログデータに変換され、比較制御回路
22に与えられ、同じく質量流量計測装置21に
より計測された値と、該比較制御回路22におい
て比較されその差を電気信号として電磁弁11の
ソレノイドに指令し、設定空気量に回復させる。
このようなフイードバツク制御により、運転中の
原料ミツクスの平均化された流量に追従して設定
した空気量が供給される。
尚、ホイツパー出口における製品の温度を計算
式に加味して空気量を補正することにより、製品
温度による微妙なオーバーランの変動要素をデー
タとして入力して、より正確にオーバーランがコ
ントロールされる。表は昭和59年9月11日にテス
トした本実施例の結果をマイコン付属のプリンタ
ーにより打ち出したデータである。表中SGWSは
オーバーラン設定比重、SGWPは実測比重、
FCPはクリーム流量(/h)である。
本表によれば、運転開始時間が14時58分34秒で
あり、運転開始後14時間59分59秒には、既に設定
値のオーバーラン比重に達している。その間僅か
1分25秒であり、これは従来法に比較して驚くべ
き時間短縮である。
更にそれ以後は、実測比重がオーバーラン設定
比重と全く一致しており、従来法による設定値に
対する上下5%のバラツキに比較して、素晴らし
いオーバーランの持続的安定化が可能である。ア
イスクリームのオーバーラン安定化方法に対して
も、本発明は原理的に充分応用できるものであ
る。尚、空気量はセンサーにより検知した。

The mass flow rate is measured while passing through the valve 10 and the mass flow rate measuring device 21 . The temperature-sensitive resistance wire 18 of the detection part of the device acts as a sensor and detects the change in the amount of air flowing into the flow tube 17 as a change in temperature, that is, a change in resistance value. Detection is possible. Utilizing this principle, the bridge circuit 19 extracts changes in the mass flow rate as changes in the voltage signal. This voltage signal (hereinafter referred to as the sensor output signal) is given to the comparison control circuit 22, and compared with the above-mentioned flow rate setting signal. The applied current is varied to pull the valve upwards. Conversely, when the sensor output signal is larger, the valve moves downward so that the opening degree of the valve becomes smaller. This automatic movement of the valve is achieved by subtle automatic adjustment of the electromagnetic force by varying the solenoid current. In this way, the opening degree of the valve is automatically adjusted so that the sensor output signal and the flow rate setting signal are the same, and the set air amount is adjusted to the three-way switching valve 12, the check valve 13, and the connecting joint 14.
The raw material mix is mixed into the raw material mixture moving through the pipe 3. When the above-mentioned cumulative time has passed a certain set time (3 seconds in the case of this embodiment), the method of calculating the rated air amount at the start of operation is changed to the method of calculating the rated air amount during operation using the following formula. Although it is a constant volume pump, the flow rate fluctuates minutely in the same way. Air flow control cannot follow these subtle fluctuations. Therefore, it was decided to use the average value of the cream flow rate within a certain period of time for the above-mentioned FCPB value. The amount of air is calculated from each data input to the microcomputer based on the above formula, and the flow rate setting signal is sent to the converter 26 via the input/output port 25.
The data is converted into analog data and given to the comparison control circuit 22, where it is compared with the value also measured by the mass flow rate measuring device 21, and the difference is used as an electric signal to command the solenoid of the solenoid valve 11. , to restore the set air volume.
Through such feedback control, a set amount of air is supplied in accordance with the averaged flow rate of the raw material mix during operation. By correcting the amount of air by taking into account the temperature of the product at the outlet of the whipper into the calculation formula, the overrun can be controlled more accurately by inputting subtle overrun fluctuation factors due to the product temperature as data. The table shows the data of the results of this example tested on September 11, 1980, printed out using a printer attached to the microcomputer. According to this table, the operation start time is 14:58:34, and the overrun specific gravity of the set value has already been reached at 14:59:59 after the start of operation. The time required is only 1 minute and 25 seconds, which is a surprising time reduction compared to conventional methods. Furthermore, after that, the measured specific gravity completely matches the overrun setting specific gravity, and as compared to the 5% variation above and below the setting value in the conventional method, excellent sustained stabilization of the overrun is possible. さて、ホイツパーを運転中、装置の系から何ら
かの異常が生じた場合、例えばホイツパー冷却水
温度が設定値の上限をオーバーした場合、或いは
ダツシヤー(図示していない)の圧力が異常に高
くなつた場合等の時、本発明の装置はこれらの異
常値の上限及び下限をマイコンに予め記憶させる
と共に、これらの異常値を感知するセンサを本装
置の所定場所に設置しておくことにより、第3図
のコンピユーター制御フローシートに示すよう
に、ダツシヤー(図示していない)、第1ミツク
スポンプ2、第2ミツクスポンプ4及び電磁弁1
1は自動的に停止する。但し、空気圧縮機9は停
止しない。この場合上記異常値の原因が判明し、
異常個所が正常に復し、本装置を再起動する場
合、前記した運転開始時の空気量がマイコンに記
憶されており、立上り時のオーバーラン設定比重
を従来法に比較して、ごく僅かな時間で安定させ
ることが可能なのは、前記した通りである。
次に運転終了時には第3図に示すように、まず
ダツシヤー(図示していない)が停止し、次にマ
イコンに記憶された運転終了時の空気量の信号
(定格)が電磁弁11に出力され、所定量の空気
が接続継手14を経由して第2ミツクスポンプ
4、ホイツパー5へ供給され、原料ミツクス及び
オーバーランされたホイツプクリームが空気によ
り追い出される。最後に第1ミツクスポンプ2、
第2ミツクスポンプ4及び電磁弁11が自動的に
停止され、マイコンのランダムメモリ中のデータ
がフロツピーデイスクに書込まれ、装置は停止す
る。
(発明の効果)
この発明の方法によれば、原料ミツクスへの供
給空気量を質量で測定するので、温度、圧力の変
化に拘らず所定量の空気を供給することが可能と
なり、オーバーランにバラツキが生じるおそれが
ない。またオーバーラン発生装置の始動後所定時
間の間(立上り時)には定格質量の空気を供給す
ることとしたので、従来運転開始後オーバーラン
発生装置の出口から所望のオーバーランの製品が
得られるまで、最低5分以上を要していたとこ
ろ、この発明によれば、1〜2分程度まで時間を
短縮することができる。従つて、作業におけるロ
スタイム及び不良品の発生を著しく減少させるこ
とができる。しかも立上り時のオーバーランを勘
に頼つて手動により微調整する必要もない。
更にこの発明の方法によれば、運転継続時にお
いては、原料ミツクス供給量の変動及びオーバー
ラン発生装置の出口における製品温度をマイコン
へ入力して供給空気量を制御することとしたの
で、原料供給量に若干の変動があつても、所望の
オーバーランを得ることができ、一定のオーバー
ランを維持することができる効果がある。
次のこの発明の装置によれば、原料ミツクスの
供給量を検出する手段と、オーバーラン発生の装
置の出口における品温を検出する手段と、前記手
段により検出された原料ミツクス供給量、品温及
び予め入力されたデータによつて最適空気供給量
を算出する手段並びに、該最適空気供給量と現に
供給されている空気質量とを比較して電磁弁の開
度を指令する比較制御回路とを設けたので、原料
ミツクス供給量やオーバーラン状態の変動に対応
して、常に最適な空気量(質量)の空気を供給す
ることができる。然して製品のオーバーランを自

ーランの前後におけるコンピユータ入力済のミツ
クスの比重と立上り時間に基づき算出された質量
の空気を供給することを特徴としたオーバーラン
