Description
本発明は輸送中の可塑化現象、即ち「ボテ現
象」に対する安定性に優れ、かつホイツプ性の点
では広範囲の使用温度条件下においても経時変化
の少い良好な物性を示す起泡性水中油型乳化クリ
ーム状組成物およびその製造法に関する。
従来、起法性水中油型乳化クリーム状組成物な
らびに生クリームを調整して得られるホイツプク
リーム用乳化組成物は、輸送中の連続的な振動に
よつて可塑化つまり「ボテ現象」を発現せしめ商
品価値を損なうことが多かつた。またこの可塑化
現象とホイプクリームにしたときの物性が密接に
関連していることから、乳化剤等添加物を調整し
て可塑化現象を迎えた場合で保型性のないクリー
ムとなるのが通例であつた。加えて、これらの現
象は使用する油脂の結晶状態と密接に関連してい
ることから温度条件により極めて敏感に影響を受
け可塑化現象をおさえてなおかつ保型性を出し得
たとしても、油脂の融点以下の温度範囲ではホイ
ツプ後経時的にホイツプクリームは固さを増しケ
ーキに美しくデコレーシヨン出来なくなるばかり
か食味食感が損なわれてしまい、これらの諸特性
を全て具備したクリームを作ることは、それぞれ
が互に負の相関関係を示すことから極めて困難
で、いずれかの点で問題をかかえているのが通例
である。
本発明による起泡性水中油型乳化クリーム状組
成物は輸送中の可塑化現象の発現が全くなく、し
かも通常使用している油脂の融点および結晶状態
からクリーム温度を7〜8℃以下としてホイツプ
することを余儀なくされていた制約条件を、15〜
18℃以下の広範囲にして行なつても保型性の良好
な経時変化の少ないホイツプクリームとなし得
る。したがつて輸送中または使用時までに振動を
受ける等でクリームが流動性を失なう現象、通常
「ボテ」と称されるクリームの可塑化現象を全く
なくすることが可能となり、遠距離輸送、積み替
え作業等の配送が問題なく行なえることとなる。
このことは生産の集中、大規模生産を可能にする
こととなり、経済的にも品質管理面においても非
常に有効な効果が期待できるものとなる。これま
でにもこの可塑化現象を防止する方法としてレシ
チンとシヨ糖脂肪酸エステルを併用する等が提案
されているが、レシチンはチヨコレート、マーガ
リン、キヤラメル等比較的風味の強い製品の場合
には問題はないが、ホイツプクリームのごとき風
味の淡白な素材の持つコク味を賞味する様な製品
については、独特のレシチン臭と呼ばれる異味の
ため素材の風味をそこなうこととなる。この異味
はホイツプして直后のクリームから食味されるま
でに経時的に増加する。これはクリームが分散す
る脂肪球で作られており、ポイツプ後この脂肪球
が経時的に合一をしていくことによりレシチン臭
が増大するものである。これはシヨ等脂肪酸エス
テル以外の乳化剤または安定剤としての金属塩の
種類によつては、これらを併用することでさらに
異味を強く発現せしめることとなり食味を一層損
なう結果となる。本発明はこの様な難点のあるレ
シチンを使用せずに風味の良好な、可塑化現象を
防止したクリームを提供することが可能である。
さらに通常、クリームをホイツプする時クリー
ム温度を7〜8℃以下場合によつては4〜5℃以
下に調整して行なうことが通例とされている。し
かし最近の様に大規模な生産を行なう洋菓子店え
の生産や生洋菓子の様に商品の回転が早い場合は
冷蔵庫内での短時間の保管の後使用されるケース
が多く、従がつて輸送または配送中に温度が上昇
したまま冷蔵庫で4〜5℃以下まで冷却すること
が困難となつたり、ホイツプする部屋の室温管理
(室温25℃以下)も生産の大小を問わず難かしい
状況にある。これまでのクリームでは7〜8℃以
上でホイツプした場合やそれ以上の温度でケーキ
に造花、デコレーシヨンした場合、クリームの脂
肪球が急激に凝集や合一を起こすことから絞れな
くなつたり、絞れてもキメの悪い組織の荒れた状
態となつて商品価値をそこなうものであつた。本
発明ではこの様な使用温度範囲をこれらホイツプ
クリームの通例であつた4〜5℃または7〜8℃
以下から15〜18℃以下と大巾に拡張しても、なお
かつ良好な物性つまり絞るに適当な堅さを損なわ
ずキメ組織の良好なクリームが得られる。その
上、ホイツプ後のクリームの経時変化が極めて小
さいことから、これまでのクリームではホイツプ
後直ちにケーキに造花デコレーシヨンしてしまう
必要があつたが、後の実施例で示すごとく一定の
時間経過後においても安定的に美しい造花デコレ
ーシヨンが得られる。
本発明は、可塑化現象を抑えようとして乳化剤
の量や種類を調整したりするとホイツプしなかつ
たり、ホイツプしてし経時的に変化が大きかつた
りするホイツプクリームの物性調整法について鋭
意研究の結果、新しい知見を得て完成されたもの
である。即ち、分散する脂肪球の界面に配位する
乳化剤の量と種類によつて分散脂肪球の凝集や合
一の進行が制御され、このことがホイツプクリー
ムの物性そのものを決定する大きな要素であると
の知見から、凝集や合一が進行して脂肪球の絶対
界面積が増加してもかつ脂肪球界面での乳化剤密
度をコントロールすることにより安定な物性を得
ようとするものである。つまり飽和脂肪酸からな
る乳化剤の配位密度と不飽和脂肪酸からなるそれ
との量比のバランスによつて脂肪球界面に配位出
来る乳化剤の密度を制御することにより、脂肪球
の凝集合一の進行に依存しない界面状態を得よう
とするものであり、さらにこの界面に吸着する蛋
白質を微分散かつ安定化させることとエマルジヨ
ンを均一な状態に調整することにより、この効果
を助長発現せしめようとするものである。
本発明は不飽和脂肪酸エステルと飽和脂肪酸エ
ステルとの重量比が25:75〜55:45である乳化剤
の合計量が、組成物全体に対し0.03〜1.0重量%
であることを特徴とする起泡性水中油型乳化クリ
ーム状組成物およびその製造法を内容とする。
ここでいう不飽和脂肪酸エステルおよび飽和脂
肪酸エステルの乳化剤とは基本骨格がポリグリセ
リン、グリセリン、シヨ糖またはソルビタンに対
して炭素数12〜18の脂肪酸がエステル結合したも
のを言い、脂肪酸の基数がグリセリンの場合1ま
たは2、その他はエステル結合し得る個数までの
もので、この内の脂肪酸が他の有機酸で代替され
たものも包含する。不飽和脂肪酸エステルの乳化
剤は分散脂肪球の界面での乳化剤密度を低下させ
る目的を持つが、不飽和脂肪酸エステルと飽和脂
肪酸エステルとの量比が25:75〜55:45を超え、
不飽和脂肪酸エステルの量比が高くなるとクリー
ムは可塑化し易くまたホイツプしても使用する油
脂の融点が高い場合は堅くて絞れなくなつたり、
絞れても極めてキメ組織が悪くなり、逆に使用す
る油脂の融点が低い場合はホイツプしても保型性
が得られない。逆に飽和脂肪酸エステルの量比が
高くなると可塑化し易くまたホイツプ性が悪くな
る。乳化剤の総量は油脂含量と分散脂肪球の絶対
界面積に左右されるが、0.03重量%未満であると
クリーミング現象を起こし1.0重量%を越えると
風味を損なう。以上の要件を該組成物が満たし有
効量の油脂、乳固形物および水をもつて水中油型
乳化した本発明の起泡性水中油型乳化組成物は可
塑化に対して安定で、しかもホイツプ時には広い
温度範囲で使用でき、経時的に変化の少ない良好
な物性風味を有する。
さらに、(A)油脂にポリグリセリン脂肪酸エステ
ル、グリセリン脂肪酸エステル、シヨ糖脂肪酸エ
ステルおよびソルビタン脂肪酸エステルに属する
群からなる乳化剤を2種以上選択して混合し、か
つ該乳化剤のそれぞれの不飽和脂肪酸エステルと
飽和脂肪酸エステルとの重量比が25:75〜55:45
である油脂組成物と、(B)無脂固型物を含む水溶液
にポリグリセリン脂肪酸エステル、グリセリン脂
肪酸エステル、シヨ糖脂肪酸エステルおよびソル
ビタン脂肪酸エステルに属する群からなる乳化剤
を2種以上選択して混合し、かつ該乳化剤のそれ
ぞれの不飽和脂肪酸エステルと飽和脂肪酸エステ
ルとの重量比が25:75〜55:45である水溶液を含
有し、(A)と(B)とが25:75〜60:40となる様に調整
して得られる当該乳化組成物は油相および水相の
両方から界面での乳化剤密度を調整出来、経時的
な物性の変化が少なく、キメ組織の良好なクリー
ムを提供することができる。乳化される該油脂組
成物と該水溶液の比率は、該油脂組成物が25重量
%未満であるとホイツプしても保型性が得られず
流動状態のまま含気率(OR)の上昇が見られな
い場合があり、一方該油脂組成物が60重量%を越
える場合は調整したミルクが増粘化等により流動
性を失ない、当初より可塑体となつてホイツプに
適さなくなつてしまうことが多く、気泡性乳化組
成物としての価値を有さない。
さらに好ましくは、該組成物に対し安定剤とし
てポリリン酸ソーダ、ヘキサメタリン酸ソーダ、
メタリン酸ソーダおよび第一リン酸ソーダからな
る群から選ばれた1種以上を組成物全体に対して
0.03〜0.2重量%添加することである。これら安
定剤は乳化界面に吸着する蛋白質等高分子物が相
互に結合することを防止すると考えられ、当該組
成物に用いる天然原料の品質のバラツキによる粘
稠化等品質のバラツキを吸収して安定なエマルジ
ヨンを作るのに効果がある。しかし添加量が0.2
重量%を越えるとエマルジヨンは塩析によりクリ
ーミングし易く、一方0.03重量%未満となると天
然原料等の品質の差によつてはクリームが粘稠化
してしまう。
なお、本発明に用いる油脂は天然食用油脂なら
びに分別、硬化およびエステル交換等によつて得
られる油脂を包含する。また無脂固型物は大豆蛋
白質、小麦蛋白質等の植物性蛋白質または乳蛋白
質、卵白蛋白質、血清蛋白質等の動物性蛋白質の
精製物ならびにこれを酸、アルカリまたは酵素で
分解したもの等ならびに生クリーム、バター、全
脂粉乳、脱脂粉乳、牛乳、脱脂乳または各種乳製
品類に含まれる無脂乳固型物の単独あるいはいず
れかの混合物であつても良い。その他の無脂固型
物としては、糖、デンプン、CMC等の炭水化物
類、カゼイン、カゼインソーダ、ゼラチン等の蛋
白類ならびにこれらを素材として加えるために二
次的に混入するものを含め、極度に増粘化させ流
動性を損なう等の食味性を低下させるものでなけ
れば特に制限はない。
本発明において、より改良された可塑化に対す
る安定性と広い使用温度範囲ならびに経時変化の
少ない物性風味を得るためには、当該組成中の蛋
白質を熱変性させることおよび出来るだけ均一に
調整、製造する必要がある。
本発明組成物の一般的製造法としては、先ず乳
化剤、安定剤、増粘剤、無脂固型物および風味料
を予め脱脂乳、牛乳および/または水に溶解分散
させた水溶液と、乳化剤および風味料を油に溶解
分散させた油脂組成物とを約60〜70℃付近で予備
乳化混合し、次いで殺菌または滅菌する前およ
び/または後で二段式ホモゲナイザーで均質化
し、これを冷却する方法をとればよい。
蛋白質の熱変性と均一化を行なうための手段と
して、殺菌および滅菌の温度と時間からなる熱エ
ネルギーはアミノカルボニル反応等で商品の品質
を低下させない程度に与えればよい。しかしなが
ら、間接殺菌あるいは滅菌を行なつた場合には、
蛋白質の熱変性よりもアミノカルボニル反応によ
る褐変が進行して商品品質を損なう結果となる場
合がある。そこで直接蒸気吹込みによる滅菌手段
を用いて、蛋白質の熱変性と蒸気吹き込みによる
キヤビテーシヨン効果および/またはハンマリン
グ効果による均一化を行なうことにより、高い含
気率でしかもキメ組織の良好な目的物が得られ
る。
さらに均一化をするための手段としてホモゲナ
イザーを使用するが、滅菌の前と後と比較すれば
滅菌の後に均質化を施した方が効果的で安定な品
質を得ることが出来る。好ましくは滅菌の前後両
方で均質化を行なうことにより、品質のバラツキ
のない高度に安定な目的物を得ることが出来る。
均質化は二段式ホモゲナイザーを用い、第一段圧
を0〜50Kg/cm2の範囲で、かつ第二段圧を10〜
100Kg/cm2の範囲で行なうことが望ましい。この
範囲外の場合は、クリームの粘稠でしかも気泡性
に劣るものとなる。
要するに、本発明の組成物をより改良された形
で得るための調整、製造法としては、蛋白質を熱
変性させることおよびエマルジヨン系を極力均一
にするために殺菌または滅菌により熱エネルギー
を与えること、その前および/または後で二段式
ホモゲナイザーにより均質化することにあるが、
より好ましくは直接蒸気滅菌方法の後で二段式ホ
モゲナイザーにより均質化すること、最も好まし
くは直接蒸気滅菌方法と前後で二段式ホモゲナイ
ザーにより均質化することである。
以下、実施例および比較例により本発明をさら
に詳細に説明する。
実施例 1
下記の配合により起泡性水中油型乳化クリーム
状組成物を製造した。量は重量%を示す(以下同
じ)。
大豆硬化油 42.00%
ヤシ油 5.00%
脱脂乳 52.26%
キサンタンガム 0.02%
および
水溶性乳化剤 ポリグリセリン脂肪酸エステル
0.20%
〃 シヨ糖脂肪酸エステル 0.12%
油溶性乳化剤 グリセリンモノ脂肪酸エステル
0.20%
〃 ソルビタンモノ脂肪酸エステル
0.20%
上記4種の脂肪酸を用い、不飽和脂肪酸対飽和
脂肪酸の含量比が0.25/0.75の比となる様調整し
た乳化剤を使用した。
脱脂乳を60℃に昇温し撹拌しながらポリグリセ
リン脂肪酸エステル、シヨ糖脂肪酸エステルおよ
びキサンタンガムを添加溶解した溶液に、予め大
豆硬化油およびヤシ油を混合撹拌して、グリセリ
ンモノ脂肪酸エステルおよびソルビタン脂肪酸エ
ステルを添加溶解した油脂組成物を60℃で流下さ
せ混合撹拌して乳化した。こうして調整された予
備乳化液をプレート式熱交換器を用いて120℃で
3分間殺菌をした後、二段式ホモゲナイザーで
65/85Kg/cm2(65は第一段、85は第二段の圧力を
示す。以下同じ)で均質化し、8℃に冷却して一
昼夜冷蔵庫に保存した。
上記の如くして得られた目的物について可塑化
時間を測定するとともに、ホイツプしてクリーム
の評価を行なつた。
可塑化時間の測定は第1図に示したように、筒
径70mmの金属性容器1に100c.c.のクリーム4を容
れ、20℃に保温しながら該クリームの中で直径60
mmの円板ペラ3を回転させることにより、輸送時
の可塑化に対する耐性を測定した。回転数
350rpmで最長30分間を限度として測定したが、
30分では可塑化せず安定な輸送耐性を示した。
ホイツプしてクリームを評価する方法は、5℃
および10℃に調整した二種のクリームについて室
温25℃の部屋でホイツプして行なつた。ホイツプ
したクリームは同室温に放置して昇温し20分後と
60分後に絞り袋で1個20c.c.程度に星型造花して、
美しく絞れた個数を指標として造花性を評価し
た。なお最大50個を限度とした。
その結果、表中実施例1に示すごとく温度に安
定で経時変化の少ない、風味も極めて良好なトツ
ピング物性を示した。
ちなみにホイツプ時ミルク初温5℃の場合、ホ
イツプ直後で13℃、20分後で15℃、60分後で17℃
であり、またホイツプ時ミルク初温10℃の場合、
それぞれ15℃、17℃、18℃であつた。
実施例 2
実施例1中乳化剤を下記の通り変更して実験を
行なつた。
水溶性および油溶性乳化剤 ポリグリセリン脂肪

上記の脂肪酸組成で不飽和脂肪酸対飽和脂肪酸
の含量比が0.55/0.45の比となる様調整した乳化
剤を用いた。
以上の結果、表中実施例2に示すごとく良好な
クリームを得た。
実施例 3
実施例1中乳化剤を下記の通り変更して同様の
実験を行なつた。

0.30/0.70となる様に調整した乳化剤を用いた。
以上の結果、表中実施例3に示すごとく安定な
クリームを得た。
実施例 4
下記の配合により、実施例1と同様の方法で実
験を実施した。

以上の結果、表中実施例4に示すごとく安定を
クリームを得た。
実施例 5
実施例1において、さらに安定剤としてヘキサ
メタリン酸ソーダを0.2%添加して実験を行なつ
た。その結果粘度の低下がみられ、表中実施例5
に示すごとく良好なクリームを得た。
実施例 6
実施例5において、120℃、3分の間接殺菌を
140℃、5秒の直接蒸気吹き込みによる滅菌に変
更して実験を行なつた。その結果オーバランの増
加が見られ、さらに温度安定性の高い、経時変化
の少ない極めて良好なクリームが得られた。
実施例 7
実施例6において、滅菌処理後の均質化に代え
て滅菌処理前に均質化を行なつた。以上の結果、
表中実施例7に示すごとく良好なクリームが得ら
れた。
実施例 8
実施例6において、滅菌処理後に行なつていた
均質化を、滅菌の前後の両方で行なつた。以上の
結果、表中実施例8に示すごとく極めて良好なク
リームが低粘度で得られた。
実施例 9
下記の配合により、実施例8と同様の製法で起
泡性水中油型乳化クリーム状組成物を製造した。

実施例 10
下記の配合により、実施例8と同様の製法で起
泡性水中油型乳化クリーム状組成物を製造した。

以上の結果、表中実施例10に示すごとく安定な
クリームが得られた。
実施例 11
実施例8において、ヘキサメタリン酸ソーダの
添加量を0.4%に増加させて実験を行なつた。そ
の結果、絞つた造花より若干の離水はみられるも
のの安定なクリームが得られた。
実施例 12
実施例8において、滅菌後ホモゲナイザー圧力
を65/85Kg/cm2から20/120Kg/cm2に変更して同
様の実験を行なつた。その結果表中実施例12に示
すごとく、実施例8よりも増粘し造花性は劣るも
のの安定なクリームが得られた。
実施例 13
実施例8において、滅菌前のホモゲナイザー圧
力を65/85Kg/cm2から20/120Kg/cm2に変更して
同様の実験を行なつた。その結果表中実施例13に
示すごとく、実施例8よりも増粘し造花性は劣る
ものの安定なクリームが得られた。
比較例 1
実施例1において、乳化剤の不飽和脂肪酸/飽
和脂肪酸比を0.20/0.80として同様の実験を行な
つた。可塑化時間が2.5分と短く、ホイツプの温
度に対する安定性が悪く、大きな経時変化を示し
た。
比較例 2
実施例6において、乳化剤の不飽和脂肪酸/飽
和脂肪酸の比を0.60/0.40とした。粘度が621cp
と高粘度化し、ミルクホイツプ時初温10℃ではク
リームはホイツプしなかつた。
比較例 3
実施例8において、乳化剤の不飽和脂肪酸/飽
和脂肪酸の比を0.60/0.40とした。極めて短い可
塑化時間を示した。
比較例 4
実施例8において、乳化剤の不飽和脂肪酸/飽
和脂肪酸の比を0.20/0.80とした。可塑化時間は
長いものの温度に対する安定性、経時変化は不良
であつた。
比較例 5
実施例8において、乳化剤の不飽和脂肪酸/飽
和脂肪酸の比を0.30/0.70としたまま、かつ乳化
剤の種別も同様にしてその総量を1.06%とした。
得られたクリームは極度に増粘化し、可塑化時間
もほとんど0分に近く、ホイツプしなかつた。
比較例 6
実施例8において、乳化剤の不飽和脂肪酸/飽
和脂肪酸の比を0.30/0.70としたまま、かつ乳化
剤の種別も同様にしてその総量を0.02%とした。
比較例5と同様極度に増粘化し、可塑化時間もほ
とんど0分で、ホイツプしなかつた。
叙上の実施例と比較例との結果から自明の如
く、比較例の組成物はいずれも商品性が著しく劣
るものであつた。
