Description

【発明の詳細な説明】[Detailed description of the invention]

(産業上の分野) 本発明は、粳米粉及び/又は糯米粉を用いて調
整される生地の物性改良剤に関わるものである。
更に詳しくは、日本固有の伝統的食品である餅、
大福餅、団子等の粳米粉や糯米粉を用いて調整さ
れる食品の物性、特に“コシ”及び保型性を付与
するとともに、生地の硬化(老化)を抑制する改
良剤に関するものである。 通常、餅は主として粳米の水膨潤物を常圧下で
蒸し、その澱粉を糊化させたものを搗きかためる
事によつて得られる。しかしながら、大量生産を
行なう場合、原料の保存安定性、作業性等の問題
から、粳米を粉砕、乾燥した糯米粉を用いる事が
多く、このとき糯米を使用したものに比べ“コ
シ”が弱く、また煮くずれを起しやすいといつた
問題点が生じている。 一方、通常の餅とは異なり、数日間その柔らか
さを保持させる必要があるもの、即ち柏餅、大福
餅、団子等では、その柔らかさ保持を目的として
β―アミラーゼ系の酵素製剤や砂糖のごとき保水
性物質が添加されている。しかしながら、これら
も同様に、粳米粉、糯米粉といつた粉を使用する
ため、“コシ”が弱く、且つ温度変化による物性
変化が激しい。つまり、気温が高い時期には酵素
反応の進行により経日的に“コシ”がなくなり、
一方、気温の低い時期では逆に澱粉の老化が進行
し、生地が硬化する。即ち、粳米粉や糯米粉を使
用する食品において、“コシ”および保型性を付
与するとともに経時的の物性変化を抑える新しい
改良剤が望まれている。 (従来技術と問題点) このような粳米粉や糯米粉を用いた食品の“コ
シ”の低下という問題点を解決する方法として、
浮粉(小麦澱粉)等を添加することが経験的に行
なわれているが、その硬化は調整直後だけであ
り、且つその効果も不十分である。また酵素製剤
添加餅における経時的な“コシ”の低下に関して
は何ら効果はない。また、温度による物性変化に
対しては、ほとんどの場合、酵素製剤や砂糖の増
減で対応している。しかしながら、酵素の場合、
温度による影響が大きく、その増減で物性をコン
トロールする事が非常に困難な状況である上、砂
糖の場合、味の面で大きな問題となつてくる。 本発明は粳米粉や糯米粉を使用する場合に生ず
る“コシ”の低下を防止し、歯ごたえのある食感
を付与するとともに、経時的な物性の変化を抑え
る新しい物質を提供することにある。 (問題点を解決するための手段) 本発明者らは、各種澱粉にレシチンを加え、乾
燥、糊化したレシチンデンプンの性質・性能及び
その利用面を研究した結果、該レシチンデンプン
を添加することにより、餅の“コシ”が著しく強
まり、且つ気温が高い場合、経時的にも“コシ”
が保持された餅が得られること、また気温が低い
時におこる生地の硬化に対しては、該レシチンデ
ンプンに更に食用油脂を添加する事により“コ
シ”を保持し、且つ柔らかさを保持した生地が得
られること、即ち気温の高低にかかわらず生地物
性を安定的に保持させる事ができる事を見出し、
本発明を完成するに至つた。 該レシチンデンプンは水に分散しにくく(ダマ
になりやすい)、作業性の点で工夫が必要である
が、油脂と混合することによりスムーズに生地中
へ入り込み、またレシチンデンプンが油脂を保持
した形で生地中へ分散するため、油脂もそのもの
単独よりも均一に生地中に分散させることができ
る。油脂が澱粉の老化を抑制することは公知を事
実であるが、レシチンデンプン、油脂の組合わせ
により餅の“コシ”、保型性の強化及び柔らかさ
保持に効果がある事は此迄知られておらず、全く
新規な発見である。 本発明に用いる澱粉類としては、食品工業等に
おいて原料として常用されている馬鈴薯澱粉、甘
薯澱粉、タピオカ澱粉のような通常の地下澱粉、
あるいはトウモロコシ澱粉、小麦澱粉、粳米澱
粉、サゴ澱粉のような地上澱粉を用いる事がで
き、またリン酸架橋及び/又はアセチル化、ヒド
ロキシプロピル化等の化学修飾を施した澱粉でも
よい。 また使用するレシチンとしては、市販の大豆レ
シチン、卵黄レシチン等をあげる事ができ、これ
らのレシチンはリン脂質含量99%以上の高純度の
もの、例えばセントロレツクスR(米国、セント
ラル・ソーヤ社製:登録商標)からリン脂質含量
60%以上で油状のもの、例えば豊年大豆レシチン
F(豊年製油(株)製:登録商標)、更にはリン脂質含
量30%程度の卵黄レシチン、例えばPL―30(キユ
ーピー(株)製:登録商標)のようなものまで、いず
れのものも使用することができる。 更に、使用する食品油脂に関しては、菜種油、
大豆油、パーム油等の植物性油脂;魚油、ラー
ド、タロー等の動物性油脂の一種又は二種以上の
組合せ、或は乳化剤等を含んだシヨートニング何
れでも良いが、該生地改良剤が添加された生地が
ら成る製品(団子、大福餅等)が保存される温度
において、該生地改良剤中の食用油脂の固体脂含
量(SFC)が2以上、50以下でなければならな
い。SFCが2未満では生地老化防止効果が弱く、
逆に50を越えると生地の効果を促進する。 該レシチンデンプン及び食用油脂の混合比率
は、澱粉100部に対してレシチン1〜50部を含む
レシチンデンプン100部に対して食用油脂0〜900
部である。この中で、レシチンの比率が対澱粉1
部以下では生地調整直後は“コシ”がでるが、経
日的に“コシ”は低下し、また50部以上では風味
上好ましくない。一方食用油脂の比率は、気温が
低い場合(25℃以下)生地の柔らかさを保持させ
るためには、20部以上900部以下が好ましく、900
部以上になると生地の“コシ”を付与する事がで
きない。一方、25℃以上の高い温度では酸素反応
の進行により生地が逆に軟化し、“コシ”が低下
する事が大きな問題であり、この範囲では食用油
脂の比率は20部以下が好ましい。 該生地改良剤の生地への添加量は、対粉0.3〜
5.0重量%が好ましく、酵素添加生地においても
同範囲で良い。また該生地改良剤の生地への添加
時期は、原料の配合段階でも、蒸し上つた後でも
何れも良い。 該生地改良剤は、β型澱粉とレシチンを水と共
に、その糊化温度以上に加熱し、乾燥、粉末化し
たものに食用油脂を混合することによつて得られ
る。この乾燥、粉末化には、食品工業等で常用さ
れている装置、例えば回転円筒型乾燥機あるいは
噴霧式乾燥機等を必要に応じて任意に用いる事が
でき、また液中の固型分濃度は、使用する装置の
能力に応じて2〜3%の極く薄い濃度から60〜70
%の高濃度まで任意のものを用いる事ができる。 一方レシチンデンプンと食用油脂との混合は、
該食用油脂の融点以上の温度で行なう事が好まし
いが、シヨートニング等の室温で流動性のあるも
のは、その温度で行なつても良い。また、その混
合方法は撹拌槽を用いた場合、あるいはラインミ
キサー等任意の方法が使用できる。 (発明の効果) 上記のごとくして得られた生地改良剤は、餅の
“コシ”及び保型性を強化するとともに、外気温
の変化による経時的な物性変化、つまり気温が高
い時い起こる“コシ”の低下や、逆に低温での生
地の硬化(老化)を防止する効果があり、現在レ
トルトぜんざい等で問題となつている餅の溶出や
柏餅、団子等での経時的な物質変化に対しても有
効である。 (実施例) 次に、製造例及び実施例により本発明を詳細に
説明する。 製造例 1 馬鈴薯澱粉90gを含む水懸濁液500mlにセント
ロレツクスR(高純度顆粒レシチン、セントラ
ル・ソーヤ社製:登録商標)10gを溶解させた
後、ダブルドラムドライヤーにより表面温度160

後、砂糖と混合しながら徐々に添加していつた。 得られた大福餅の“コシ”及び硬さの経時変化
を実施例2と同様にして評価し、その結果を第2
表に示す。 第2表から、30℃保存においては対照及びα化
澱粉、製造例6添加区が共に3日後で生地の“コ
シ”が低下し軟化しているのに対し、製造例1、
7添加区においては5日後においても歯ごたえが
保存されており、充分食することが可能であつ
た。

粉末、製造例4で得られた油脂含有レシチンデン
プン及び市販α化澱粉を用いて、常法に従い餅を
製造した。なお無添加のものを対照とした。即
ち、市販の糯米粉1Kgに水700mlを添加、混合し
た後、10分間蒸練を行ない室温冷却し、製品を得
た。レシチンデンプンの添加量は対粉1.0%とし、
配合段階で添加するとともに、油脂含有レシチン
デンプンについては添加量対粉2.0%、蒸練後、
添加した。 このようにして製造した餅の“コシ”を官能評
価にて評価した結果を第3表に、また、その餅を
更に一定型に成形した後、50%砂糖溶液中に浸
し、120℃30分レトルト殺菌したものの溶液の濁
度を経時的(20℃保存)に測定した結果を第1図
にそれぞれ示した。なお官能評価についてはパネ
ラー5名にて5段階で評価した。 これらの結果から、明らかにレシチンデンプン
及び油脂含有レシチンデンプン添加により“コ
シ”及び保型性が向上している事が判る。なお市
販α化澱粉でも調整直後の“コシ”は付与される
が、経時的な保型性には効果が認められない。

【特許請求の範囲】 1 澱粉とレシチンの比率が澱粉100部に対して
レシチン1〜50部である混合物を、水とともに該
澱粉の糊化温度以上に加熱、糊化した後、乾燥、
粉末化して得られるレシチンデンプン粉末100部
に対して、食用油脂0〜900部を混合して得られ
る粳米粉及び/又は糯米粉生地改良剤。 2 澱粉とレシチンの比率が、澱粉100部に対し
てレシチン1〜50部である混合物を、水とともに
該澱粉の糊化温度以上に加熱、糊化した後、乾
燥、粉末化して得られるレシチンデンプン粉末
100部に対して、食用油脂0〜900部を混合して得
られる粳米粉及び/又は糯米粉生地改良剤が、粉
に対して0.3重量%以上、5重量%以下の範囲で
添加されていることを特徴とする粳米粉及び/又
は糯米粉生地。 3 該生地から成る製品の保存温度において、生
地に添加された生地改良剤中の食用油脂の固体脂
含量(SFC)が2以上50以下である特許請求の範
囲第2項記載の生地改良剤を含む生地。
