[Detailed Description of the Invention] <Industrial Application Field> The present invention relates to a method for removing the peel or the core, or both, of so-called late fruit fruits, such as Japanese cabbage and honeysuckle. The present invention relates to a method for removing the peel and/or the core of late fruit fruits using liquefied gas.

Unshiyu mandarin orange (Unshu mandarin orange) has a large amount of essential oils such as linemon, naringin, and linanol in its peel. The skin of the fruit is thin, flexible, and easy to peel, and when peeling the fruit, the essential oils are less likely to scatter and stain your hands and clothes yellow. In addition, the sacs of the fruit are thin and soft, so they are easy to peel. Because it can be eaten, it has the advantage of being eaten easily, with a "clean feeling" and "smartly".

However, Unshiyu mikan (Unshu mandarin orange)
Compared to the fruit, "late fruit" has a thicker skin of 7 to 8 mm, is hard, and is difficult to peel. Also, when peeling the fruit with your fingernails, it is difficult to remove the skin from the skin, which contains a large amount of linemon.
Essential oils such as naringin and linanol scatter, staining your hands and clothes, and the sacs are so thick and hard that you have to remove them before eating. For this reason, even though the fruits are rich in juice and delicious, they tend to be avoided due to the fact that they are difficult to eat.
This is the cause of sluggish growth in consumption.

In addition, as a method for industrially removing the peel and spores, the peel is heated for a short time with boiling water or steam to soften the pericarp and then peeled, followed by using chemicals such as hydrochloric acid solution or caustic soda solution. There is a method of immersing it in water, but it requires many steps and time, and requires a great deal of effort, equipment, and expense.
In addition, there were problems such as the original taste of late-citrus fruits changing due to the chemical treatment.

That is, in this invention, a cut is formed on the surface of the pericarp, a rod-like body with high thermal conductivity is inserted in the center, and the pericarp surface or the rod-like body, or both, are frozen by freezing means such as liquefied gas spraying. The object of the present invention is to provide a method for removing the peel and/or the center of a late fruit fruit after freezing, by scraping the surface of the pericarp, pulling out the rods, or both techniques.

<Means for Solving the Problems> In order to achieve the above-mentioned object, the present invention partially freezes the peel or the center, or both, of so-called late fruit fruits, such as Hatsusaku and Iyokan, using a freezing means. In particular, the method for removing the pericarp involves forming cuts in the pericarp, freezing the pericarp surface by a freezing means, and then removing the pericarp surface by a peeling means, and
The method for removing the center portion is characterized by inserting a rod into the center, freezing the rod using freezing means, and then pulling out the rod.

FIGS. 1 to 3 are diagrams showing the steps of the method for removing the pericarp and/or the center of late fruit fruits according to the present invention. In this example, a method of removing both the pericarp and the center is used, but it is also possible to implement a method of removing only the pericarp or only the center.

*[Fourth step: Formation of cuts in the pericarp] A cutter is used to form a cut 18 with a depth of 2 to 3 mm in the surface layer of the pericarp. The cut 18 is formed by cutting in the direction of the meridian and latitude of the globe (first

(See Figure 2). It is preferable that the iron pipe 14 be inserted up to about 2/3 of the way inside the hatch 10 (see the sectional view shown in FIG. 1). Inserting a hollow iron pipe cools the iron pipe by passing a refrigerant into the hollow part of the iron pipe, and freezes the center (the central periphery and seeds of the iron pipe) around it. This is to make it adhere. In this example, an iron pipe is used as the rod-shaped body to be inserted inside the night fruit, but it is not limited to this, and any material made of a material with high thermal conductivity (for example, an iron core rod) can be used. *[Sixth step: Freezing of pericarp using freezing means] The hatchet 10 with the hollow core rod 14 inserted is placed on a stainless steel net conveyor, and the peel is placed inside the liquid nitrogen spray freezing device (heat-insulated tunnel: inside the heat-insulated tunnel). The system consists of a liquid nitrogen spray header and nozzle (injection hole), an air stirring fan, a ventilation fan and duct, a conveyor drive motor and a speed reducer, etc. The nitrogen glass is still at a sufficiently low temperature, so it is circulated and evacuated using a stirring fan to effectively cool the glass.)

0 (see Figure 2, 1). The time for passing through the liquid nitrogen spray freezing device can be adjusted within a certain range (30 seconds to 30 minutes), and if the evaporation temperature of liquid nitrogen is -196°C, very rapid freezing can be achieved. 2 to 3 minutes to remove only the peel.
Deep freezing at temperatures below 20℃ is possible. As a result, only the 16 parts of the pericarp of the pericarp 10 are frozen, and at the same time, the 18 parts of the cut formed in the pericarp are warped (see FIG. 2). however,
The fruit part has not yet reached the point of freezing. Also,
As the refrigerant passes through the hollow part of the iron pipe, the iron pipe 14 is also rapidly frozen, and as a result, the iron pipe tip portion 15 (the iron pipe portion inserted inside the pipe can 10) is also rapidly lowered. As a result, the iron pipe tip portion 15 is frozen and bonded to the center edge 20 of the tube.

In addition, in this example, a method of injecting liquid nitrogen to late fruits is used as a freezing method, but the method is not limited to this, and freezing only the pericarp by immersing the fruits in liquid nitrogen is also possible You can also do it.

*[Seventh step: Removal of frozen fruit skin] The hollow iron pipe 14 of the fruit with frozen fruit skin is suspended and introduced one by one into the rotating scratch cutter part, taking care not to damage the fruit, and then freezing the fruit. Scrape off the peel. This also removes the cuticle of the hatsusaku.

*[Eighth step: Removal of the iron pipe 14] With the pericarp part 16 and the pericarp removed, the hollow pipe 14 is introduced into two rails while suspended, and the two rails are used to remove the pericarp. Support it and pull out the hollow iron vipe 14. (See Figure 3). As mentioned above, since the iron pipe tip 15 is freeze-adhered to the center edge 20 of the tube, when the iron pipe 14 is pulled up, the iron pipe tip 15 is surrounded by a tube. The center edges 20 are stuck together and removed. Also,

In this example, the method was explained in detail using Hatsusaku as an example, but the method is not limited to this, but it can also be applied to other late fruit fruits that have thick skin and are difficult to peel (such as Iyokan and Natsumikan). It can also be implemented in the same way.
