本発明は、アルコール性液体調味料に関し、更
に詳しくいえば、微少量のタウマチンを配合する
ことにより、加工食品に対して通常の使用量の70
%以下で十分な添加効果が得られる新規なアルコ
ール性液体調味料に関する。 従来より、畜肉、魚肉の加工業界では、畜肉、
魚肉の嬌臭、静菌、香味向上を目的として、日本
酒、みりん、本なおし、ワイン、シエリー、ラ
ム、ブランデーなどの酒類及びそれらを基材とす
るエチルアルコール含有の醗酵調味料及びその加
塩された醗酵調味料など、アルコール性液体調味
料が使用され、また同様に漬物、惣菜、たれ物、
菓子類などの加工食品にも嬌臭、静菌、香味向上
を目的として広く使用され、通常、1〜8%位の
添加使用率で加工食品の素材に練り込まれると
か、表面に散布、塗布しして応用されており、特
に天然物指向の消費者の嗜好により、需要が広が
りつつある。また、調味加工用としても、和風、
中華、洋風などの各種料理用にも、香味改良、か
くし味、こく味など味の向上改善にレストラン、
家庭内でも消費が増加している。 しかしながら、従来の酒類及び醗酵調味料など
のエチルアルコール含有の調味料は、経済的な面
とエチルアルコールの刺激臭から使用量が限定さ
れ、十分に効果が発揮されるとはいえない。特に
貴重な風味のよい高級ワイン、シエリー、マデイ
ラ、ブランデー、本みりんなどを使用するのは高
価であるので、他の安価な醗酵調味料またはアミ
ノ酸、糖類などから合成されたエチルアルコール
含有調味料や水、エチルアルコールで稀釈したも
のを使用しなければならなかつたため、風味向上
にも限界があつた。 一方、西アフリカ原産のタウマトコツカス・ダ
ニエリ・ベンス(Thaumatococcus danielli
Benth)の果実から得られるタウマチン
(Thaumatin)は、蛋白系天然高甘味物質として
最近注目されてきた。 タウマチンは、砂糖の2000〜3000倍の甘味を有
する甘味物質として特性があるほかに、微量のタ
ウマチンの存在によつて、ビーフ、チキン、カツ
オなどのエキス、ペパーミント、コーヒー、チヨ
コレート、オレンジなどの香味が増巾される特長
が認められ、更にソーセージ、ハンバーグなどに
使用される羊肉や鶏肉の風味を嬌臭し、水産練製
品の魚臭を低減する効果があり、所謂マスキング
効果を有するものとされている。而しながら調和
のとれた増巾作用を得るには工夫を必要とし、し
かも、タウマチンは極めて高価な抽出植物蛋白で
あり、甘味作用、香味増巾作用としては0.01〜
0.000001%と非常に低濃度で使用することが必要
なため、一般市場にあつては、各用途に応じて工
夫された適当な増量剤を使用して粉末形態でタウ
マチンを稀釈したものが使用されている。 したがつて、タウマチンを使用する場合に、タ
ウマチンの呈味性が糖などと違つて特殊なため、
食品によつてはそれらの増量剤が役立たぬばかり
か、逆に物性面、風味面で支障をきたす場合があ
るため、かなり複雑な組成の目的に合つた増量剤
の選定組合せが必要である。 また、タウマチンは比較的低分子の蛋白質であ
ることから、乾燥状態のみで安定であるため、稀
釈増量剤としては粉末形態に限定され、そのため
に増量剤の種類に限界がり、特に使用しやすい水
溶液状態にはできなかつた。その上、多くの場
合、かかる増量剤としては合成物が使用されてき
た。したがつて、対象食品によつては、せつかく
の香味をおさえてしまうとか、望ましくない風味
をかえつて増巾するなどの欠点があり、例えばビ
ーフエキスに用いると味は強くなるがビーフ特有
の香りが弱くなるなど、使用が難かしいという問
題があつた。 上記の諸欠点を解決するめ、本発明者らは鋭意
研究した結果、エチルアルコール含有の液体調味
料(酒類を含む、及び無塩、加塩の醗酵調味料、
合成アルコール含有調味料などを云う以下同じ)
にタウマチンを微少量配合する方法を見だした。
すなわち、本発明は、エチルアルコールを含有す
るアルコール性液体調味料に微少量のタウマチン
を配合してなるアルコール性液体調味料を新規に
提供するものである。 本発明によれば、調味料としての風味の増巾、
相乗効果が達成され、添加される加工食品及び調
理品の風味改良向上が著しく、タウマチン単独で
使用する場合に比して優れた調和のとれた風味
で、しかも調味料の従来の使用量を大巾に減少で
き、少くとも常法の1〜8%の添加率が0.7〜6
%で十分で、従来の加工食品へのエチルアルコー
ル含有調味料及び酒類の使用率を70%以下に切り
下げることができ、経済的であり、また使用率を
下げることによりエチルアルコールの刺激臭の発
生をおさえることができる。特に、本発明におい
ては、醸造酒または醗酵調味料を主体としたエチ
ルアルコール含有液体調味料の採用により酒類及
び醗酵調味料に含まれる天然及び醗酵由来の有機
酸類、糖類などのバランスが、タウマチン単独使
用の欠点をカバーし、極めて調和のあるアルコー
ル性液体調味料とすることができる。 また、タウマチンはエチルアルコール濃度10〜
60%(容量)の溶液に容易に溶解し、特に使用し
やすい液体状態の調味料とすることができるとと
もに、例えば、エチルアルコール含有醗酵調味料
に溶解した場合、エチルアルコールに対するタウ
マチンの溶解性と調味料の緩衝作用、防腐性によ
り、貯蔵安定性が得られ、使用時のタウマチンの
変質が防止できるとともに、タウマチンの凝集沈
澱が防げる。 本発明において、アルコール性液体調味料とし
ては、エチルアルコールを10〜60容量%含有する
酒類及び醗酵調味料(無塩、加塩)が好ましく、
具体的には、清酒類、みりん、本なおし、ワイ
ン、シエリー、またその蒸溜物であるブランデ
ー、ラム等及びその加塩されたものがあり、必要
に応じて各種アミノ酸、有機酸、香料、エキス
類、抗酸化性物質、褐変物質、糖類、塩類などを
含んだもの、或は加工食品の種類、目的に応じて
これらが適当に組合されて加えられたものでも差
支えない。 本発明のアルコール性液体調味料は、上記相乗
効果により、加工食品に対する添加使用量を大巾
に下げることができる。例えば、従来のみりん
(加塩)〔比重1.151、エチルアルコール分13.4%、
エキス分43.9%、全糖42.1、直糖38.9、アミノ酸
1.13、塩分2.1〕を使用してスケソウすり身を原
料とするかまぼこの製造において、従来原料100
部に対しみりんを5部使用していたのに比べて、
本発明のタウマチンを配合したみりんは僅かに2
部すなわち従来の使用率の40%で十分効果が得ら
れるものである。 タウマチンの配合率は0.0001〜0.1重量%がよ
いが、望ましくは0.01〜0.001重量%の範囲が最

配合併用することにより、前述の通りにタウマチ
