【発明の詳細な説明】[Detailed description of the invention]

「技術分野」 本発明は、水系での分散性に優れていると共に
口当りがよく、したがつて飲料その他の流動性食
品にも混入できるように物性の改質された食物繊
維の製造法に関するものである。 「従来技術およびその問題点」 人類は、古くから食物繊維の多い食品を摂取し
てきたが、現代人の多くは、生活水準の向上に伴
ない、嗜好性を重視するようになつた結果、動物
性食品や各種精製食品、加工食品など、食物繊維
の少ない食品を摂取することが多くなつている。
食物繊維摂取量の減少傾向には、食物中の繊維質
成分はエネルギー源にならないばかりか、栄養分
の利用効率を低下させるとした学説があつたこと
も関係がある。しかしながら、食物繊維の生理化
学的作用については、近年多くの重要な事実が明
らかにされてきた。例えばBurkitは、アフリカ
原住民の食生活を研究した結果、食物繊維を多く
含む食事を摂取している彼らは、食物繊維含有率
の低い食品を摂取している欧米人よりも、虫垂
炎、憩室疾患、心臓血管病、大腸ガンの発生率が
低いことを報告している。また、海老原らは、小
麦フスマを用いた実験の結果、食物繊維は、食物
の体内滞留時間を短くし、糞便の量およびその含
水量を増すことを確認している。 これらの研究成果をもとに、近年、穀物のふす
ま、はい芽、果実、果皮などの食物繊維の豊富な
素材、あるいは精製したセルロース粉末などの食
物繊維そのものを食べ易いように加工したり、既
存の固形ないし半固形の食品(例えばパン、クツ
キー、ビスケツト、ケーキ等)に混入したりする
ことが行なわれるようになつた。しかしながら、
食物繊維素材の中でも、食物繊維含有率の高い素
材あるいは精製した食物繊維等は、硬質で口当り
が悪いから、これを食品に添加したり、いわゆる
健康食品として単用またはそれに近い形で摂取し
ようとする場合は、どれほど口当りのよいものに
加工されているかが問題になる。また、飲料のよ
うな流動性食品に食物繊維を配合した場合にも、
配合率は低くても、舌先は食物繊維のテクスチヤ
ーの良否を明確に感じとるから同様の問題があ
り、かつ、この場合は、水中における懸濁安定性
が問題になる。これらの点で、加工食品としての
従来の食物繊維は、食物繊維含有率の低い一部の
ものを除くと満足できるものではなかつた。ま
た、食物繊維含有率が低くそのような問題点を有
しないものも、食物繊維含有率が低いという本質
的な欠点のほかに、食物繊維以外の植物体成分が
多いことにより固有の味、香り、色などを持ち、
このため用途が限定されるという欠点があつた。 一方、近年、食物繊維の懸濁液を高圧で均質化
処理を行なうことにより、微細化する方法が行な
われている(特公昭60−19921号参照)。しかしな
がら、これらの方法は、食物繊維の懸濁液を小径
オリフイスを通過させるために、予め食物繊維を
細断しなければならず、また、3000Psi以上の圧
力で何回も繰り返し処理しなければ目的とするも

という欠点があり、大量処理には不適であつた。

む材料の処理には適しているが(特公昭61−5704
号参照)、通常の食物繊維の処理には適している
とはいえなかつた。 「発明の目的」 本発明の目的は、繊維質を高率で含有するにも
かかわらず口当りがよく、しかも水中に懸濁させ
たときの安定性がよく、したがつて広い範囲の飲
食物に繊維質強化の目的で添加するのに適した食
物繊維の製造法を提供することにある。 「発明の構成」 本発明による食物繊維の製造法は、非穀物系の
不溶性食物繊維を、湿式状態でずれ応力の作用を
行なわせながら磨砕し、少なくとも部分的にミク
ロフイブリル化することを特徴とする。 このように、食物繊維を湿式状態でずれ応力の
作用を行なわせながら磨砕することにより、簡単
な操作で食物繊維をミクロフイブリル化すること
ができる。ここで、ミクロフイブリル化された食
物繊維とは、それぞれの食物繊維の持つ独特の繊
維束状の構造物(または明確な繊維束状構造をも
たないにしても)が、ずれ応力により破壊されて
糸状にほぐれ、これらが相互にからみ合つたもの
である。その典型的な例を第1図、第2図(225

用される。非穀物系の不溶性食物繊維として好ま
しくは、セルロース、キチン、キトサンなどが使
用される。 セルロースとしては、例えば市販のセルロース
の如く、ブナやカエデなどの広葉樹、松などの針
葉樹から採取したパルプを粉末化したものが使用
できるが、その他、綿のセルロース、稲わら、麦
わら、きびがらなど、果実、野菜、草木系のもの
も利用できる。 キチンは、カニ、エビ、オキアミ、昆虫などの
甲殻類の殻に含まれている難消化性の多糖類であ
り、例えばこれらの粗原料をそのまま用いること
ができる。また、これらの殻を化学処理し、カル
シウムや蛋白質等を除去することにより得られる
精製物を細断したものが市販されており、このよ
うな精製物を用いることもできる。 キトサンは、キチンを高濃度アルカリで処理す
ることにより生成する塩基性多糖類であり、近
年、そのコレステロール低下作用が注目されてい
る。キチンと同様に細断されたものが市販されて
いる。 これらの食物繊維は、必要に応じて粗粉砕され
る。この粒度は、処理に用いる機械や食物繊維の
種類により異なるが、得られる処理物の品質や処
理効率から通常16〜100メツシユの範囲のものを
使用することが好ましい。すなわち、16メツシユ
より粒度の大きいものでは、後の磨砕工程におけ
る処理を効率的に行なうことが困難となり、また
100メツシユを超える粒度の細かいものでは、そ
の繊維長が短すぎるために相互にからみ合う力が
弱くなり、良質なミクロフイブリル化した食物繊
維が得られないからである。 そして、本発明においては、上記食物繊維を湿
式状態でずれ応力の作用を行なわせながら磨砕処
理する。ここで、湿式状態とは、上記食物繊維を
水等の液体に懸濁させた状態を意味する。この懸
濁液の食物繊維濃度は、0.1〜10重量%が好まし
く、0.3〜5重量%がさらに好ましい。そして、
磨砕処理は、食物繊維を湿式の状態で磨砕する能
力を有する装置であればいずれも利用できるが、
中でも粉砕外力としてひねり動作と圧縮剪断作用
を有する挽き臼(バアーミル)、粉砕外力として

行なう食物繊維の製造法。 3 特許請求の範囲第1項または第2項におい
て、前記非穀物系の不溶性食物繊維を、予め16〜
100メツシユの粒度に調整した後、前記磨砕を行
なう食物繊維の製造法。 4 特許請求の範囲第1項ないし第3項のいずれ
か一において、前記非穀物系の不溶性食物繊維
が、セルロース、キチン、キトサンから選ばれた
ものである食物繊維の製造法。
