Description
本発明は、パン、ケーキの表面に塗布するアイ
シングとして用い、アイシングの吸湿による泣き
(ベトつき、流れ出し)、ヒビ割れを防止し、風味
食感が良く、作業性のすぐれかつ艶の良いアイシ
ング組成物に関するものである。
従来アイシングはパン、ケーキ、菓子の製造に
おいて、白く表面を被覆して、見映え良く見せ、
甘みを与え、楽しく食べるために考え出され、製
菓、製パン上の有効な技術として発展して来た。
アイシングに要求される性状としては、色、光沢
が良好で、ヒビ割れせず、乾き難く、商品に付着
してはがれ落ちたり、溶け出したりしないこと、
食感として滑らかで、砂糖その他の成分の結晶が
出てジヤリジヤリせず、口溶けがよいこと、アイ
シングの作業上粘度が低く、塗布が均一で適宜の
厚みになること等が挙げられる。従来アイシング
は砂糖が主成分であり、砂糖だけの場合は上記の
点でいろいろ問題があつたが、添加剤(安定剤)
が用いられるようになつて改良されて来ている。
それらの例として、ガム質として、アラビアガ
ム、ローカストビーンガム、グアーガム、ペクチ
ン、ゼラチン、カルボキシメチルセルロース、デ
ンプン類として、デンプン、加工デンプン等が用
いられている。これらは、単体で用いた場合泣き
の防止、ヒビワレ防止、ツヤ出しに効果がある
が、十分ではなく、日持ちが若干良くなる程度
で、泣きが入り、ベトツクようになる。また効果
が出て来る添加量が1〜数%であり、そのために
アイシングの粘度が上昇し、堅くなり作業が極め
て困難になつて来る。またガム質とデンプン類を
併用した場合にも効果は出て来るが、添加量が多
いため粘度上昇により、作業上の取扱いが困難と
なり実用的ではない。
このような問題点に対して本発明者らは検討を
行い、泣きのない、ヒビ割れのないアイシングの
組成物を検討した結果、本発明に到達したもので
ある。本発明は、ガム質、蛋白質、デンプン類が
或る比より成り、それに糖類とその他の成分を混
合して得られるアイシング組成物を用いてアイシ
ングを調製することにより、上記の問題点を解決
し、かつ効果の高いものが得られることを見出し
たものである。つまり本発明はガム質:蛋白質:
デンプン類の比が、重量にて、1:0.1〜1:0.1
〜1より成り、これと糖類とその他の成分より成
ることを特徴とするアイシング組成物である。
本発明のアイシング組成物に用いるガム質とし
ては、グアーガム、ローカストビーンガム、アラ
ビアガム、キサンタンガム、寒天、ペクチン、ア
ルギン酸、アルギン酸ソーダ等が挙げられる。ガ
ム質は添加量が多くなるとまた粘度の上昇が著し
くなり、作業性が悪くなる。従つて、ガム質はガ
ム質、蛋白質、デンプン類の合計量中において50
%を越えない方が良い。またここに用いる蛋白質
としては、大豆蛋白質、小麦蛋白質、乳蛋白質、
活性グルテン等が挙げられ、その添加量が多くな
ると、風味、食感が低下し、かつ着色の原因にな
るので、上記合計量中において、25%を越えない
方が好ましい。
またデンプン類としてはコーンスターチ、イモ
デンプン、米デンプン、小麦デンプン、α−化デ
ンプン、リン酸化デンプン、加水分解デンプン、
エステル化デンプン、エーテル化デンプン等が挙
げられ、その添加量が多くなるとデンプンによる
結合のため、のりつぽくなり、味が悪くなると共
に滑かな口溶けが阻害される。従つて上記合計量
中において、25%を越えない方が好ましい。
またここに用いる糖類としては、結晶状または
粉末状の糖類が挙げられるが、均一に混合し易い
ことより考えると、結晶状より粉末状の方が好ま
しい。その例としては、砂糖、グラニユー糖、結
晶麦芽糖、結晶ブドウ糖、果糖、精製ブドウ糖、
粉末ブドウ糖、粉末還元麦芽糖等が挙げられ、こ
れらより選ばれたる1種または2種以上の混合物
として用いられる。
以上のように本発明のアイシング組成物はガム
質:蛋白質:デンプン類の比が、1:0.1〜1:
0.1〜1より成るが、好ましくは1:0.2〜0.5:
0.2〜0.5より成る。そしてガム質、蛋白質、デン
プン類とその他添加物との合計量に対して、糖類
を50〜550倍量を加えるのであるが、100倍量以上
を加えるのが好ましい。
その他の添加物としては、乳化剤、食用油脂、
食用ワツクス、脱脂粉乳、炭酸カルシウム、食塩
等が挙げられるが、これらは適宜必要に応じて、
添加して用いる。乳化剤にはグリセリン脂肪酸エ
ステル、シヨ糖脂肪酸エステル、プロピレングリ
コール脂肪酸エステル等を乳化分散のために用い
る。
食用油脂には動植物油脂とその硬化油が用いら
れるが、特に動植物油脂でも上昇融点の高い油脂
が良く、硬化油とした場合にも高融点、特に極度
水添硬化油が好ましい。また、動植物油脂または
硬化油を分別して得られる融点の高い固体脂を用
いることも出来る。食用ワツクスとしては、ライ
スワツクス、ミツロウ等が挙げられる。食用油
脂、食用ワツクスは融点の高いものの方が艶出
し、並びに固化性の点から好ましい。また無機塩
として炭酸カルシウム等を白度を鮮明に出すため
に用いることができる。
本発明のアイシング組成物は、予めガム質、蛋
白質、デンプン類、その他の添加物をまず粉末糖
類に添加し均一に攪拌し、次いで水を加え加熱し
透明に溶解したのち、糖類に加えてアイシングを
製造する方法と、ガム質、蛋白質、デンプン類の
各々規定量をアイシングの製造の際に糖類等と共
に添加する方法があり、いずれの方法によつても
得られるアイシングは同じものである。アイシン
グの調整に際し、注意すべき点は、ガム質、蛋白
質、デンプン類を水、糖類の存在下に加熱し溶解
する時に、つぶが残らないようによく攪拌するこ
とが必要である。つぶが残ると食感が悪くなり、
口溶けが悪くなり、商品価値が低下してしまう。
以上のようにして得られたアイシングは、パ
ン、ケーキ等に塗布するか、またはアイシングに
パン、ケーキ等を浸してアイシングを付着させ
る。
以下本発明を実施例により説明する。
表−1に実施例1〜6および比較例1〜5の配
合比を示す。表−1のアイシング組成物を用いて
アイシングを調整し、パンに塗布して、次の試験
を行い、その結果を表−2に示す。
(イ) アイシングの条件
(i) 試験用パン:丸型のパン(表面に卵を塗布
した)を焼成後、室温に30分間放冷し、ポリ
エチレン製袋に入れ室温に保存する。
(ii) アイシングの塗布:表−1の組成をもつた
アイシングを60℃に保ち、その中にパンの上
表面をつけて、引き上げ余分のアイシングを
落しアイシングを付着させる。これを室温に
て10分間放冷した後、ポリエチレン製袋に入
れ、室温に1時間放置する。
(ロ) 試験方法
(i) 作業性:アイシングの際の塗布状況より粘
度及び一定の厚さの塗布を判定した。
(ii) 風味、食感:アイシングを口に含み、風味
及びざらつき、ねばり等の食感を判定した。
(iii) ヒビ割れ:アイシングしたパンを10〜20℃
の恒温に5日間保持し、その表面を観察し、
ヒビ割れ又は泣きの状況を判定した。
(iv) 泣き:アイシングしたパンを30〜35℃の恒
温に3日間保持し、泣きの状況を判定した。
(ハ) 判定方法
判定方法は次のように行つた。
(i) 作業性
○…極めて均一な厚さに塗布される。
△…大体均一だが、厚目の塗布になる。
×…粘度が高く、厚い塗布になり、かつ不
均一。
(ii) 風味、食感
◎…風味、食感共に良好。
○…風味、食感共に特に問題なし。
△…風味、食感に若干難点あり。
×…風味悪く、のりつぽくベタツキがあ
る。
(iii) ヒビ割れ
◎…ヒビ割れなく、表面が極めて良好。
○…ヒビ割れが若干ある。
△…ヒビ割れがかなりある。
×…ヒビ割れが多く、アイシングの剥離あ
り。
(iv) 泣き
◎…原型を保持し、濡れやくずれがほとん
どない。
○…原型を保持しているが、濡れやくずれ
が若干ある。
△…ほぼ原型をとどめているが、濡れが著
しく、部分的にくずれている。
×…原型をとどめず、流れてしまつてい
る。

Edible oils and waxes having a high melting point are preferred from the viewpoint of gloss and solidification. In addition, calcium carbonate or the like can be used as an inorganic salt to clearly bring out the whiteness. The icing composition of the present invention is prepared by adding gum, protein, starch, and other additives to powdered sugar in advance, stirring them uniformly, then adding water and heating to dissolve them transparently. There is a method of producing icing, and a method of adding specified amounts of each of gummy substances, proteins, and starches together with sugars, etc. during the production of icing, and the icing obtained by either method is the same. When preparing the icing, it is important to note that when the gums, proteins, and starches are heated and dissolved in the presence of water and sugars, it is necessary to stir well so that no lumps remain. (ii) Flavor and texture: The icing was placed in the mouth and the flavor and texture such as roughness and stickiness were evaluated. (iii) Cracks: Ice the bread at 10-20℃.

(iv) Weeping ◎…Retains its original shape with almost no wetting or deterioration. ○...The original shape is maintained, but there is some wetting and deterioration. △...The original shape is almost retained, but it is extremely wet and has partially collapsed. ×...It doesn't retain its original form and has drifted away.
