が望ましい。pH5未満では水洗処理して得られる油脂の
酸化安定性が低下し、一方pH8を超えると油脂の風味の
劣化が促進されるので好ましくない。また、pHの調整は
クエン酸,酒石酸,リンゴ酸,アスコルビン酸などの有
機酸および/またはそれらのナトリウム,カリウムなど
の塩類を用いるのが望ましい。
