杵打がなされない場合もある。また餅はその使用
用途によつて出来上がり状態を異ならせているも
ので、例えば大幅の皮に用いる場合は、杵打回数
を多くして所謂腰のない餅になる。しかし餅に腰
がなくなり非常に延びが良好な状態となると、回
転体に付着し易くなり、餅の取り出しに不便であ
ると共に、臼本体底部より突出している回転体の
外周側面に巻き付てしまう場合がある。この様に
回転体にフツ素樹脂加工を施し、餅の付着を防止
したとしても、餅の付着力が弱いときには回転体
の回転力が餅に伝達されず、杵打ちの回数増加に
伴つて餅の付着力が増加すると回転体への餅の付
着が生じ不具合となる。

面に巻き付く状態となる。しかし凹凸条81によ
つて餅の回転体8への付着力が減じられて、餅の
巻き付きが防止される。

ので、回転体に凹凸条を設けることで、餅の付着
力の強弱に基づく種々の問題点を解決したもので
ある。
