至った。すなわち本発明は鶏卵およびリゾリン脂質を含
有することを特徴とする麺類品質改良剤及び鶏卵及びリ
ゾリン脂質を添加することを特徴とする麺類の製造方法
に関するものである。本発明のリゾリン脂質とは、リゾ
フォスファチジルコリン,リゾフォスファチジルエタノ
ールアミン,リゾフォスファチジルイノシトール,リゾ
フォスファチジルセリン,リゾフォスファチジン酸より
選ばれた1種又は2種以上の混合物である。本発明のリ
ゾリン脂質を得る方法については多くの公知の方法があ
る。例えばJournal of the Ameri
can Chemist’ Society Vol.
53 P425(1976年)には大豆レシチンをフォ
スフォリパーゼAで加水分解してリゾリン脂質を得る方
法について記載がある。また特開昭63−279753
によって天然物由来のレシチンよりリゾリン脂質を製造
することができる。本発明のリゾリン脂質は特に限定さ
れるものではないが、大豆由来のレシチンをフォスフォ
リパーゼAにより、部分加水分解したものが好ましく、
更に好ましくは良好な色調や風味を得るため、部分加水
分解の際に副生する脂肪酸を公知の方法、例えば有機溶
媒にて除去精製したものを用いることが望ましい。リゾ
リン脂質の添加量は特に限定されるものではないが0.
01〜0.5%が好ましく、更に好ましくは0.01〜
0.2%である。リゾリン脂質の添加の方法は、特に限
定はないが作業の容易さより、加水工程の前に他の粉体
と混合するか、または加水用の水に溶解して添加するの
が好ましい。本発明の鶏卵とは、一般市場に流通する殻
付き卵、液卵、粉末卵、冷凍卵などを指し、その形態に
はとらわれない。また、液卵、粉末卵、冷凍卵はその製
造工程中で卵白に分別して製造する場合があるが、本発
明の鶏卵はこれら分別品を包含するものである。さらに
加熱、酵素処理など二次的な加工を行なったり、保存性
を向上させる目的で他の成分を添加する場合もあるがこ
れらも包含するものである。このうちとくに卵白は色
素、油分が少ないため使用した製品の品質に影響を及ぼ
さないため好ましいものである。また、卵白は卵黄成分
に比べてリゾリン脂質との併用効果が高く好ましいもの
である。卵白は特に限定されるものではないが、保水力
が高いものほど湯戻りに短縮効果がある。保水力は離水
率として測定され、離水率の少ないものほど保水性が高
い。ここで、本願に用いる卵白の離水率は0.5%〜2
0%であり、好ましくは1%〜10%である。ここで、
離水率が0.5%以下では、食感が不良となり、20%
以上では本願発明の効果が得られない。本願における離

でのびを防止する目的でグリセリン脂肪酸エステル,ポ
リグリセリン脂肪酸エステル,ショ糖脂肪酸エステル,
プロピレングリコール脂肪酸エステル,大豆リン脂質,
有機酸モノグリセリド等の食品用界面活性剤を添加して
も良い。また食感を改良する目的で乳清蛋白等の蛋白
質、山芋等の多糖類、かん水,食塩等の塩類等を添加し
ても良い。本発明の麺類は、結果として含有される鶏卵
とリゾリン脂質複合体の作用によって食感を損なうこと
なくゆで上がりの早い麺類となる。本発明の麺類品質改
良剤の配合は、特に限定されるものではないが、通常、
リゾリン脂質0.01〜0.5部と鶏卵0.5〜40部
を配合し、好ましくは0.01〜0.1部と鶏卵0.5
部〜20部を配合する。また、必要に応じ、グリセリン
脂肪酸エステル,ポリグリセリン脂肪酸エステル,ショ
糖脂肪酸エステル,プロピレングリコール脂肪酸エステ
