り身の製造に当っては、凍結保存中の蛋白変性を防止す
るために、0.1〜0.5%の重合リン酸塩の添加および1〜
5%の糖の添加が行なわれてきたが、水晒しを実施して
いないクロカワカジキ等の魚肉を水晒し魚肉に添加する
場合では0.1〜0.5%程度の重合リン酸塩の添加および1
〜5%程度の糖類の添加では、凍結中の蛋白変性の防止
が不充分で商品性はほとんど無く、また、0.5%以上の
重合リン酸塩の添加は食味に影響する。しかし、本発明

に、野菜及びイカ、エビ等他の食品を混ぜて油などの
加熱工程をとるのが通常である。このためには混ぜ易く
するため、水を出発原料100部に対し20部程度添加して
水分調整した調理すり身にする必要があり、また、みり
ん、グルタミン酸ソーダ等の調味料を加えても良い。
