SOLUTION: (1) This method for preserving a food comprises treating the food with ozonized water, then placing the resultant food in a container or placing the food therein together with the ozonized water therein, hermetically sealing the container and heating the hermetically sealed food under pressure. (2) The method for preserving the food comprises treating the food with the ozonized water and then quick freezing the treated food or quick freezing the food together with the ozonized water. (3) The method for preserving the food comprises treating the food with the ozonized water and then drying the treated food.

る。密閉容器内は、そのまま加圧加熱して殺菌処理して
も良いが、真空にしたり、不活性ガスで置換したり、脱
酸素剤を同封したり等して加圧加熱して殺菌処理する
と、更に効果的である。又食品をオゾン水で処理した
後、なるべく速やかに、又はオゾン水と共に急速凍結す
ると、食品はオゾン水処理により、先ず1次殺菌処理が
行なわれ、次いで、なるべく速やかに急速凍結されるた
め、従来法に比し、そのシナジー効果により、解凍後の
保存性と風味および食感の劣化が両立して著しく改善さ
れる。又食品をオゾン水で処理した後、なるべく速やか
に乾燥させる場合も、そのシナジー効果により、保存性
と風味および食感の劣化が両立して著しく改善される。
食品をオゾン水で処理した後乾燥する場合も、オゾン水
処理によるシナジー効果により、保存性と風味および食
感の劣化が両立して著しく改善される。乾燥は通常の乾
燥法でも良いが、スプレードライ、特に、フリーズドラ
イが最も好しい。この意味から、請求項2の急速凍結し
た後フリーズドライする方法が極めて好しい。密閉容器
を使用して、加圧加熱する場合、食品に骨部があり、こ
れをそのまま食するためには加圧加熱を強くすれば可能
になることは、当然予測できる。しかも、本発明のオゾ
ン水処理を併用すれば容易になる。密閉容器は本発明の
現われるものならば任意であるが、プラスチック、金属
等が普通である。オゾン水の製造は、通常のオゾン発生
装置によって発生するオゾンを水中に放出してつくるの
が一般的である。水温は常温でも良いが、低温、たとえ
ば、2〜0℃の方がより好しい。食品は本発明の効果が
現われるものならば任意である。生のもの、乾燥したも
の、熱成したもの、凍結したもの、又はこれらを加工調
理したもの、活きているもの等が普通である。たとえ
ば、植物類、果実類、穀物類、薬草類、きのこ類、海草
類、野菜類、根菜類、魚介類、鳥類、獣類、活魚介類、
又はこれらをそのまま又は加工調理したものが普通であ
る。又その状態も、固状、泥状、液状、粉末状、塊状等
任意である。熱成は、煮成、蒸成、焼成、炒成、油揚げ
成等が普通である。熱成は半熱成したものがより好し
い。加工調理したものは、食品を加工処理したり、味付
けしたり、味付け後乾燥したりしたものが普通である。
味付け処理、全工程の前、中、後、どの段階でも任意で
ある。味付け剤も任意である。たとえば、甘味料、食
塩、酸味料、アルコール類、辛味料、とろみ料、果実
酸、しょう油、味噌、ソース、酒粕、油脂類、チーズ、
香辛料、ビタミン類、等が普通であり、これらを単独又
は組合せて使用している。加圧は大体1〜100kg/
cmが普通である。加熱温度は大体40〜150℃が
