硬牛脂1000gにグリセリン330 g及び水酸化カルシウム
1.5 gを加え、窒素気流下235 ℃で1時間撹拌し、グリ
セロリシス反応を行った。その後、90℃まで冷却してか
ら、水酸化カルシウムと等モルのリン酸で中和し、次に
水蒸気蒸留により未反応グリセリンを除去し、生成物を
得た。この生成物を常法により精製してステアリン酸を
主構成脂肪酸残基とするグリセリンモノ脂肪酸エステル
(試料2)を得た。 〔グリセリンジ脂肪酸エステル(試料3)の調製〕ハイ
エルシンナタネ油の完硬油1000gに、グリセリン330 g
及び水酸化カルシウム1.5 gを加えて、窒素気流下235
℃で1時間撹拌し、グリセロリシス反応を行った。次
に、水蒸気蒸留により未反応グリセリンを除去し、更に
薄膜式分子蒸留機でモノグリセリドを除去して、ジグリ
セリドを主成分とする生成物を得た。この生成物を常法
により精製して、ベヘン酸を主構成脂肪酸残基とするグ
リセリンジ脂肪酸エステル(試料3)を得た。 上記のようにして得られた試料1〜3のグリセリンモノ
脂肪酸エステル及びグリセリンジ脂肪酸エステルのグリ
セリド組成を表1に示す。また、パーム油の完硬油(比
較試料)の組成も併記する。表中、各試料の組成は重量
%で表示した。

リーム類60kgと40℃で混合した後、コンビネーター(SC
HRODER製)で起泡化した(冷却温度:25〜30℃、回転
数:200 〜300rpm、窒素圧:5.0barr )。こうして、本
発明のガナッシュ(I)(試料1、2又は3の比率は表
2に記載)を得た。 実施例2〜5、比較例1〜2 上記実施例1において、クリーム類油相中の試料1、
2、3及び比較試料1の比率を表2のように変化させ、
実施例1と同様にして、それぞれの比率に従ったガナッ
