Abstract
PURPOSE: Easy and economical preparation of title compounds having excellent water retainability, useful as a raw material of fish-paste product, cakes, and noodles, by extracting bean-curd refuse which is a residue obtained by separating proteins from soy beans with aqueous alkaline solution of specific pH value, and separating residual proteins therfrom.
