Abstract

PURPOSE: To prepare lactified soybean milk having excellent storage stability, by the lactic fermentation of soybean milk in a medium containing glucose, fructose, etc., with Lactobacillus acidophilus and/or Lactobacillus bulugaricus.
CONSTITUTION: Lactobacillus acidophilus and/or Lactobacillus bulugaricus are inoculated in a medium containing (A) soybean milk (0.5W5 wt%, pref. 2W4.5 wt% as crude protein) and (B) 0.2W0.85 wt% of saccharide selected from glucose, fructose, galactose and lactose, and clutured to perform the lactic fermentation. The number of the inoculated bacterial cells in the medium is 10×107W10×1010 /ml, which corresponds to 1W5 wt% of the medium. The fermentation is carried out at 30W45°C for 6W96 hours to obtain the objective lactified soybean milk having a pH value of 3.9W4.8.
