Abstract
PURPOSE: To prepare whipped cream having excellent dispersibility, whipping characteristics, smoothness, shape-retainability, and taste, by mixing a specific mixture of chocolate or cheese to whipped cream.
CONSTITUTION: Whipped cream containing a mixture of (A) chocolate (e.g. chocolate, milk chocolate, sweet chocolate, white chololate, cocoa) or cheese (e.g. natural cheese, processed cheese, cream cheese, cottage cheese, meltable cheese) and (B) an emulsifier (e.g. yolk, sucrose fatty acid ester, glycerine fatty acid ester), as a component.
