Abstract
PURPOSE: To prepare saccharified liquid by drying and simultaneously porosifying cereals (explosion drying), converting the starch in the porous cereals into α-form, physically hydrolyzing the α-starch, liquefying with a liquefaction enzyme, and finally filtering the liquid product.
CONSTITUTION: Cereals such as wheat, rice, etc. are subjected to the explosion drying (treating at 110W250°C and 2W30 kg/cm2 in a pressure vessel, and rapidly discharging into atmosphere). Because the dried cereals are porous and hydroscopic, they are crushed to 5W100 meshes immediately after cooling, and treated with a liquefaction enzyme in a liquefaction vessel with stirrer at 90W110°C and ph 5.8W 7.0 for 30W120 minutes. The amount of water is adjusted to give a solid content of 20W35 wt% after the completion of the liquefaction. The amount of the liquefaction enzyme varies with its kind, however, it is usually 0.05W0.5 wt%. After the liquefaction, the liquid (saccharified liquid) is separated from the solid residue by conventional method.
