Abstract

PURPOSE: A bacterium, which belongs to Bacillus and produces α-1, 6-glucosidase, is cultured in a medium cotaining specific 2 metal ions to produce α-1, 6-glucosidase in high yield.
CONSTITUTION: A bacterium producing α-1, 6-glucosidase as Bacillus cereus variatus mycoides (FERM-P.N.2391) is cultured in a medium containing manganese and iron ions to produce the objective glucosidase. Any compounds can be used as the source of above metal ions if they give these ions.
EFFECT: The glucosidase can be used to hydrolyze α-1, 6-glucoside bonds, as pullulan or amylopectin.
