Abstract

PURPOSE: To obtain a dried powder product having improved taste and properties, by incorporating gelatin into a protein hydrolyzate solution to facilitate the spray- drying of the hydrolyzate which cannot be effected alone readily.
CONSTITUTION: (A) An acid hydrolyzate of an animal protein, e.g. collagen protein, obtained from the skin or bones of cattle, swine, sheep, or whale, or cattle or fish meat, or (B) a liquid of animal or vegetable protein comprising 50wt% or more of the solid hydrolyzate is mixed with 3W10wt% based on the solid content of gelatin, and spray-dried.
