Abstract
PURPOSE:To add the durable perfume of matsudake mushrooms to mushrooms (M) uniformly and rapidly, without the influence of M, by injecting a gas containing vaporized matsudake perfume into an airtight vessel containing the vacuum- dried M. CONSTITUTION:The raw mushrooms 1, e.g. shiitakes, sliced to a thickness of about 0.5-5mm, are contained in the airtight vessel 2, and the air is evacuated by the vacuum pump 4 to a degree of vacuum of 10-20Torr or below to dry the mushrooms to a moisture content of 10-30%. The valve 5 on the vacuum cylinder side is closed, and the valve 8 connected to the carbonic acid gas cylinder 7 via the perfume receiver 6 is opened to inject the high-pressure gas containing the perfume of matsudake into the vessel. The pressure of the vessel is then maintained at 1.5-3kg for about 30min-5hr.
