Abstract
PURPOSE: To manufacture dried bonito which can be easily converted to flakes or shaved in home, by forming a bonito to a desired form, and processing according to conventional process for the manufacture of dried bonito.
CONSTITUTION: Head, tail, entrails and belly flesh are removed from a bonito, and the bonito flesh is divided laterally along the backbone. After removing the bones, the bonito flesh is pressed into a basket or a film tube having desired shape, and boiled. The flesh is taken out of the basket or tube, smoked and dried under conventional process, and if necessary, dried in the sun, and allowed to be covered with green mould, or finished to get a desired color.
