Abstract

PURPOSE: To provide a long-acting, harmless fungicide for food, by including ethyl alcohol in β-cyclodextrin, pulverizing the inclusion compound, and wrapping the powder with an ethanol-permeable film.
CONSTITUTION: Powder of an inclusion compound obtained by including ethyl alcohol (≥90% purity) with β-cyclodextrin, is wrapped with an ethanol-permeable film such as Japanese paper. It is supposed that the high inclusion force of β-cyclodextrin is based on its intramolecular space in which ethyl alcohol is included. The included ethyl alcohol is slowly released as vapor, and prevents the growth of mould in the space between the food (e.g. an unbacked cake) and the packaging material.
