Abstract

PURPOSE: The water content of the starting materials is raised and heating is effected with other process than boiling, thus avoiding the problem on waste disposal of the water used in boiling, saving the energy for drying, and producing noodle with readily restoring properties.
CONSTITUTION: Starting materials and 120W200 wt%, based on the starting materials, of water and mixed to form a paste for noodle, which is spread in a plate or band preferably of 1W3mm thickness. The product is heated by steaming or induction at 90W110°C for 5W30 min and the starch is converted into the α-type, then immediately cut into noodle bands, which are freeze dried at -5W-80°C for 2minW20hr and dried at a plate temperature of 30W50°C under 0.1W0.5 Torr for 15W30hr.
EFFECT: The noodle restored by pouring hot water has good untying property, shape retention, good taste and texture.
