When water is overflowed from the outlet 31, the valve 30 is closed, the water in the vessel is pressurized to 15W25 atmosphere by the pump 16, and the pressure is maintained constant until the frozen food in the vessel 1 is completely thawed to its center. After the completion of thawing, the valve 21 is slightly opened to release the pressure of water, the lid 6 is unclamped by levers 12, and the thawed food is taken out from the vessel 1. The thawing time is shortened to 1/2W1/3 compared with thawing under atmospheric pressure.
