Abstract

PURPOSE: To improve the extensibility and melleability of noodles and their yield, to prevent the deformation in boiling, and to provide the noodles with a taste having tenacity, by adding sclero gum to the noodles.
CONSTITUTION: 0.01W2wt% sclero gum is added to noodles to give the noodles. Sclero gum is an easily water-soluble polysaccharide, obtained by cultivating a fungus of the genus sclerotium, consisting of addition glucose units which are attached through β 1,6-bonds in various intervals to a main chain wherein many D- glucose units are linked through β-1,3 bonds to make a straight chain. For example, 1pt.wt. salt water and 0.5pt.wt. sclero gum are dissolved in 35pts.wt. water to give a solution, to which 100pts.wt. semi hard wheat flour is added and blended. The blend is processed into noodle lines by using 18th wire gauge. Prepared Chinese noodles does not deform in boiling and has hard properties.
