Abstract

PURPOSE: To promote fermentation and/or aging, by making one electrode of an electrically conductive material, sealing the other electrode, providing an electric field on the outer field of the electrically conductive material, followed by carrying out fermentation and/or aging under electrostatical electric field.
CONSTITUTION: When an electric current is sent from the terminals 5 and 6 of a device for setting an electric field, an electric field is produced around the electrically conductive material 1. Since the terminal 4 is sealed, an electric current does not substantially occur, and almost no electric power is consumed. The intensity of the electric field is varied freely by adjusting the voltage of the input power of the boosting transformer 22, it may be changed to the fittest value depending upon an object to be fermented or aged. When an electric current is applied from the terminals 16 and 17 of the other device, an intense electric field is set between the electrically conductive materials 11 and 12. But the electrically conductive material 11 and 12 are not connected, and substantially no electric current is applied and the electric field is set by a small amount of consumption of electric power.
