Abstract
PURPOSE: To prepare a cod roe sausage, by treating a cod roe of collapsed shape in which the enclosing membrane is broken with a phosphate, stuffing the treated roe into a casing, and heating and solidifying the roe.
CONSTITUTION: A cod roe of collapsed shape is mixed with 0.5% phosphate and further 0.5W1% starch if desired and agitated thoroughly with an agitator not to crush each egg of the cod eor. The treated cod roe is then stuffed in a casing 5 with a stuffing machine 1 having a piston 2 moving by the introduction of compressed air and a bung hole 3 projecting outward, and boiled with steam at about 75°C for 30min.
