Abstract

PURPOSE: To prepare a sweet SAKE, containing a moderate sourness and abundant amino acids, and having a good flavor, by using a rice KOJI prepared from KOJI molds having the ability to produce an acid as a seed mold starter as a raw material.
CONSTITUTION: KOJI molds having the ability to produce an acid such as black KOJI molds, e.g. Aspergillus awamori, Aspergillus usamii or Aspergillus kawachii, and variant strains thereof as a seed mold starter are used to prepare a rice KOJI similar to those used for preparing low-class distilled spirit or millet brandy by the conventional method. The resultant KOJI is then charged to prepare a sweet SAKE by the conventional method.
