Abstract

PURPOSE: To pulverize saccharified reducing starch having high dextrose equivalent (DE), effectively, by adding a specific fatty acid ester to the starch and spray-drying the mixture.
CONSTITUTION: Saccharified reducing starch is mixed with one or more fatty acid esters selected from sucrose fatty acid esters, propylene glycol fatty acid esters, sorbitan fatty acid esters and glycerine fatty acid esters in an amount of 0.1W5%, and if necessary a proper amount of stevia extract to obtain a homogeneous mixture, which is dried and pulverized by spray-drying.
