Abstract

PURPOSE: To prepare finely divided powder of coloring matter for color edible paticulate matter, capable of being adsorbed on the edible particulate matter only through blending with it and of coloring the edible particulate matter, by emulsifying and homogenizing a coloring matter together with edible fats and oils, and hydrophilic colloid, followed by subjecting the emulsion to spray drying.
CONSTITUTION: A synthetic or natural edible coloring matter is blended with a hydrophilic colloid, e.g., pectin, dextrin, etc., dissolved or dispersed in water to give a solution with a solid concentration (w/v) 30W50%, which is blended with about 1W70wt% based on dry weight of final product of edible fats and oils, e.g., beef tallow, cottonseed oil, etc. and, if necessary, a proper amount of antioxidant, emulsified so as to make oil drop diameter ≤ about 3μ, to give an emulsion. The emulsion is subjected to spray drying to give a powdered product with low water content, which is pulverized conventionally into an average particle diameter ≤100μ, preferably about 10W25μ.
