Abstract
PURPOSE: A beet sugar solution is treated with a product mainly containing melibiase which is produced by a microorganism of the genus Mortierella to effect ethanol fermentation whereby the amount of ethanol produced is increased and the foaming is prevented during the fermentation.
CONSTITUTION: A microorganism of the genus Morrierella such as Mortierella vinacea var. raffinoseutillizer is inoculated to a known medium and cultured aerobically to prepare a product mainly containing melibiase. Then, a beet sugar solution is treated with the product to promote the ethanol fermentation and remarkably reduce the foaming during the fermentation.
