Abstract
PURPOSE: To prepare regenerated meat suitable as a raw material of various meat processing, and to obtain feed and fat as by-products, by grinding the meat attached to the bone in the presence of water, separating the product into liquid and solid, acidifying the liquid, and separating the coagulated meat.
CONSTITUTION: The meat attached to bones obtained by taking the meat of cattle, poultry, etc., is ground together with a proper amount of water. The meat is separated from the bone, and dispersed in water as colloid. The meat colloid is coagulated by adding about 10W15cc of an edible organic acid such as vinegar, acetic acid, etc. per 1kg of the meat used as the raw material. The coagulated meat is separated from the liquid by a solid-liquid separation means to obtain the objective regenerated meat. Since the regenerated meat is free of blood, it has no blood- originated defect in its taste, flavor and color, and can be used as a raw material of various processed meat products after neutralization with an alkali according to the use. The solid obtained by the fractionation of the ground product can be used as a feed or fertilizer after drying, and fat is collected by heating the liquid left after the fractionation of meat coagulate, and separating the coagulated proteins and hemoglobin from the liquid.
