Abstract
PURPOSE: A lactose solution of higher than specific concentration is subjected to economically advantageous and efficient hydrolysis by use of an immobilized lactase that is prepared by immobilizing lactase originating from Aspergillus oryzae through covalent bonds.
CONSTITUTION: Lactase originating from Aspergillus oryzae is covalently immobilized on a support of macroporous phenol-formaldehyde amphoteric ion-exchange resin bearing amino groups and/or substituted amino groups and carboxyl groups and lactose in a solution is hydrolyzed with the resultant immobilized lactase. At the hydrolysis, the concentration of lactose is kept higher than those in milk and whey, e.g., a higher than 5.5%.
