Abstract

PURPOSE: To prepare a muscular fibrous food having improved quality equal to that of an animal muscle, by spinning and molding a marine or livestock animal protein as a raw material into fine fibrous form, and collecting and binding the resultant fibers without using a binder.
CONSTITUTION: One type of a marine or livestock animal meat or a mixture of two or more types of various marine and livestock animal meats is mixed with 1W 10wt%, preferably 2W4wt%, common salt and kneaded to give a kneaded meat, which is then extruded through a nozzle having a small hole with the inside diameter of 1mm or less, preferably 0.05W0.5mm, into an aqueous solution of a proteinic denaturing agent, e.g. an aqueous solution of tannin, aqueous solution of nicotinic acid, or aqueous solution of ethyl alcohol, spun and molded. The resultant fibers are then washed with water if necessary, drained, collected and heated to bind the fibers mutually and give a lump of fibrous meat.
