Abstract

PURPOSE: To prepare a food having a sense of eating closely resembling that of "kaninoko" (a tasty food obtained from the inside of a crab carapace), by coating a fine granular gelatinous substance having a specific jelly strength with coagulated egg white and/or egg yolk of a bird or fish, and binding and integrating the coated substance.
CONSTITUTION: Starch or common salt is added to coagulated egg white or egg yolk of a bird or fish or a coagulated mixture of the egg white with egg yolk or ground fish meat, and the mixture is then ground in a meat mill and coagulated under heating to give a fine granular gelatinous substance having a jelly strength of 250W1,800g, e.g. a fish paste product. The resultant coagulated substance is then coated with a coagulated egg white and/or egg yolk of a bird or fish in by heat in an amount of 20W70wt% based on the gelatinous substance. Alternatively, the fine granular gelatinous substance is uniformly mixed with egg white and/or egg yolk of the bird or fish in an amount of 20W70wt% based on the gelatinous substance, and the mixture is then boiled to coagulate the egg white and/or egg yolk.
