Description

【発明の詳細な説明】[Detailed description of the invention]

本発明はナツメヤシの実、特にその果肉部から
粉を製造する製法に関する。 本発明でいうナツメヤシは、主にイラクにおい
て産出されるPhoenix Dactyliferaをいう。 従来よりナツメヤシの実はすぐれた栄養、特に
豊富なミネラルをもつことが知られている。とこ
ろが、その加工法、利用法についての開発は十分
でない。果汁については、わずかにソース、たれ
等の原料として用いることが実用化されているに
すぎず、果肉については、さらに応用が限られ発
酵材料、飼料として用いられるに留まつている。 ナツメヤシの実の利用を図るには、ココヤシの
実について行なわれているように粉とし、各種食
品に混入させることが有効であると考えられる。
しかしココヤシの実は非水成分のうち大部分(約
70%)が脂肪であるので、単に乾燥させ粉砕する
だけで粉とすることができるが、ナツメヤシの実
は非水成分のうち大部分(約90%)が糖質であ
り、また吸湿性があるので単に粉に乾燥、粉砕し
ただけでは再び塊状にかたまつてしまい、粉とす
ることはできない。 このため果汁を分離して取出し、乾燥させあん
状としたのち、澱粉を加え、乾燥、粉砕して粉と
する方法(特公昭48−20312号公報)あるいは乾
燥させた後落花生等の油脂性のものとともに粉砕
して粉とする方法(特開昭56−99778号公報)が
案出されている。 これらの方法ではいずれも添加物を加えるため
ナツメヤシ独自の特性風味を損い、また経済性も
十分ではない。 本発明の発明者は従来ほとんど利用されていな
い果肉について着目し、その成分を分析したとこ
ろ、果汁内に糖質が流出するため糖分の割合が低
下し、繊維を含有し、さらにミネラルがきわめて
豊富であり、実、果汁にも勝ることを発見した。
そこでこの果肉を乾燥粉砕したところ、添加物を
加えることなく粉を得ることができるとの事実を
見出し、本発明を完成させた。 本発明はナツメヤシの実に水を加え加熱し、濾
過装置を用いて種子および表皮を取除く種子表皮
除去工程と、このあとさらに濾過装置を用いて果
汁を取除き糖分を減少させた果肉部を得る果汁除
去工程と、この後果肉部を乾燥させ粉砕し粉にす
る製粉工程とからなるナツメヤシ粉の製法であ
る。 種子表皮除去工程では、ナツメヤシの実を通常
の蒸煮クツカー等を用い水を加え水蒸気等で加熱
し、孔径が5mm程度の濾過装置を用いて種子を取
除き、次に孔径が0.5mm程度の濾過装置を用いて
表皮を取除く。 次に果汁除去工程では、さらに濾過装置を1〜
数段階用いて果汁を除去し、果肉部を取出す。こ
こで取除く果汁は清澄なものであつても、果肉成
分を少量含むピユーレであつてもよい。なおこの
果汁除去工程までは従来の果汁またはピユーレの
製造工程と同一である。 次の製粉工程では、前工程から取出した未だ多
くの水分を含む果肉部を乾燥させて粉砕する。こ
の乾燥は熱風法、減圧法等任意の方法を用いるこ
とができる。なお粉砕は衝撃法等機械的な方法で
行ない、最終的な粒度は使用対象に応じて各種任
意に選べばよい。 こうして製造されたナツメヤシ粉の成分は次表
の通りである。なおこの表には参考のためナツメ
ヤシの実、果汁(濃縮)およびすもも(乾果)に
ついても示す。

For this purpose, the fruit juice is separated and taken out, dried to form a bean paste, and then starch is added, dried, and crushed to form a powder (Japanese Patent Publication No. 1983-20312), or after drying, oil-based powder such as peanuts, etc. A method has been devised (Japanese Unexamined Patent Publication No. 56-99778) to grind it into powder along with other substances. All of these methods involve adding additives, which impair the unique flavor of dates, and are not economical enough. The inventor of the present invention focused on fruit pulp, which has rarely been used in the past, and analyzed its components, and found that the sugar content decreased as carbohydrates flowed into the fruit juice, contained fiber, and was extremely rich in minerals. When this fruit pulp was dried and ground, they discovered that powder could be obtained without adding any additives, and the present invention was completed. The present invention involves a seed skin removal step in which water is added to date palm fruits and heated, and the seeds and epidermis are removed using a filtration device.After this, the fruit juice is further removed using a filtration device to obtain a fruit pulp with reduced sugar content. フイルタを有するシードパルパーを用いて種子を
除去し、次に孔径が0.5mmのフイルタを有するパ
ルパーフイニツシヤーを用いて表皮を除去する。 この後、スパイラルデカンター、デスラジヤ
ー、フイルタープレスを用いて3回の濾過作業を
行ない、果汁を除去し、果肉部を取出す。ここま
での作業は通常の果汁生産作業と同一である。 次に取出した果肉部をブロツク状に皿の上に並
べ、熱風乾燥機を用い、80℃の熱風で3日間乾燥
させる。この後この果肉部を破砕機で粗砕し、衝
撃式粉砕機で微粉砕し、ナツメヤシ粉を完成す
る。
