Abstract

PURPOSE:To obtain a sandwiched food having excellent handleability and high preservability and coated with a nonadhesive exterior material, by sandwiching a homogenized unheated core material with a heat-formed exterior material. CONSTITUTION:The objective sandwiched food is produced by sandwiching (A) a core material (preferably having a pH of 4-5 and having a hardness somewhat higher than the exterior material) composed of homogenized unheated material obtained by kneading a soybean protein, an oil or fat and water with (B) an exterior material produced e.g. by kneading soybean protein (preferably soya milk powder, etc.), an oil or fat (e.g. beef tallow), water and ground meat (e.g. ground meat of croaker) and forming the mixture with heat. 加熱成形することにより、付着性を無くして取扱易くし

ンを未加熱の状態で結着性を有するペースト乃至可塑性
物質となした。そして、両者を合わせ再度加熱すること
により噛め出しがカマポコ様で内部がガンモドキ様の食
感を有するサンド食品を外材の付着等の問題がなく容易
に得ることができる知見を得て本発明を完成するに到っ
た。即ち、本発明は加熱成形して得る外材に未加熱均質
化物の内材を合わせ加熱することを特徴とするサンド食
品の製造法である。

加熱が好ましい。サンド食品の大きさは自由である。通
常、食べやすい大きさが適当である。
