を果たすような厚さに形成してある。しかして、
このベルト1は図面第1図及び第6図に示す様に
静止する左右のローラ4,5と揺動枠6により上
下の方向へ動かされる上下のローラ7,8とに張
設して、前記したローラ4か5を変速モータ9に
より任意の速さで回転させることにより、ベルト
1を一定方向へ走行させる。10は前記した揺動
枠6内に嵌入したカムで、軸11に固定し、この
軸11に連係させた変速モータ12により任意の
速さで回転させて、カム10の形により血合部b
の浅い所では削片2を魚体3へ浅く切込ませ、血
合部bが深くなれば、これに応じて切込みを深く
し、浅くなれば切込みが浅くなる様に揺動枠6を

に示す様な保持体14へ魚体3を納め、安定させ

と、魚体3がベルト1の下方に到達したとき、ベ
ルト1に設けられた削片2は魚体3に当り、繊維
質で強勒な肉部aの場合は、抵抗が大きいために
削片2は、第2図に示すように後方へ曲がつて削
り作用を果たさない。しかし、脆くて粉れ易い血
合部bの場合は、第3図及び第4図に示す様に削
刃2は曲がらずに削り作用を果たすため、肉部a
を逃げて血合部bだけを削り取る血合取りが確実
に行われるものであり、この動作は、肉部aを逃
げ、血合部bを削る動作は、血合部bの図面第5
図に示す様な正面形状に応じても削片2が血合部
bの浅い部分では曲がり、深い部分では曲がらず
に血合部bの正面形状に適合した形を採るため、
魚体3の血合肉bは残らずきれいに削り取られる
が、肉部aは殆ど削られることがないものであつ
て、然も、削られた血合部bは、削片2の移動に
伴い逐次外部へ排出されて魚体3内へ残らないも
