PURPOSE:To produce fried products in high productivity by preheating the food to be fried up to a prescribed temperature, then by frying it in the oil which is heated over the prescribed temperature, thus enabling the frying utensil to be miniaturized, shortening the frying time, and reducing the oxidation loss of the frying oil. CONSTITUTION:Foods to be fried 3 are placed on the conveyer 12 which runs in the arrow direction, sent to the space between the upper heater 8 and the lower heater 20, and preheated by electromagnetic waves generated from the magnetron 9 between paths 10 and 11 up to near 100 deg.C. Then, the preheated foods 3 are allowed to drop in the frying pan 1 containing oil 4 which is heated at 160-180 deg.C. The foods are instantaneously raised and float up on the oil surface. The fried foods are handled with rods 15, 15' which are fitted, respectively, to 2 sets of chains 16, 16' which run round repeatedly at an equal speed, pushed forward under the net 14 running at the same speed as that of the chains 16, 16', and taken out of the pan 1 by means of the conveyer 7.
