Abstract
PURPOSE:To obtain an oil and fat having broad plastic range, rapid meltability in the palate and excellent whippability and giving little oily feeling to the palate, by emulsifying an aqueous phase of an emulsifier or a water-soluble protein with an oil phase, emulsifying the emulsion with a lecithin-containing oil phase and plasticizing the product by quenching. CONSTITUTION:(A) An emulsifier having hydrophilic nature or an HLB of >=10 and/or (B) a water-soluble protein derived from animal or vegetable protein are dissolved or dispersed in an aqueous phase. The concentrations of the components (A) and (B) in the aqueous phase are 0.05-1wt.% and 1-10wt.% (in terms of protein), respectively. An oil phase (I) free from lecithin is added to the obtained aqueous phase and emulsified. The emulsion is added with an oil phase (II) containing dissolved lecithin and is plasticized by quenching. The ratio of the oil phase (I) to the oil phase (II) (I:II) is preferably 10:1-1:10 and is more preferably 3:1-1:3 from the viewpoint of the physical properties of the obtained plasticized oil and fat such as consistency or meltability in the palate.
